Baby Potato Roast - Baby Potato recipe (Indian style) - How to make baby potato curry
This a very simple and tasty fry which everyone in the family will love it. It goes well with roti and rice.
Baby Potatoes - 1/2 kg or 5oo grams
Turmeric Powder -1/4 tsp
Oil - 3 1/2 tbsp
Coriander powder -2 tsp
Cumin/Jeera powder -1 tsp
Chilli powder -1 tsp
Salt as required
For the seasoning
Mustard seeds -1/2 tsp
Jeera/cumin seeds -1/2 tsp
Pressure cook the baby potatoes for 2 whistles.It should be soft but not mushy and should retain its shape.This is very important.
Peel the skin.This is a bit difficult task but worth the effort.
Take a tbsp of oil, add all the spice powder,turmeric powder and salt. Add the potatoes to it, mix well and let it sit for 15 minutes.
Now heat the remaining oil in a pan or kadai , add mustard and cumin seeds, when they splutter, add the marinated potatoes.
Cover and cook on low flames, stirring from time to time, till all the potatoes are well roasted .
Very Simple and tasty baby potato roast is ready. It goes well with rice.
