Mexican Tacos Recipe-Vegetarian Mexican Tacos with Refried Beans

​Tacos are a traditional and very popular Mexican dish. ​Tacos can be made with a variety of fillings​ like chicken, ​​minced meat​, pork,​​ vegetables​ ​etc and garnishes such as salsa, guacamole, tomatoes, sour cream, lettuce etc. Traditionally, soft-shelled tacos​ are​ referred to​ as​ corn tortillas. Beginning from the early part of the twentieth century, various styles of tacos have become popular in the United States and Canada, like the hard-shell, U-shaped version (source wiki). When I was in London, I went to Chipotle many times and enjoyed Mexican​/Tex-Mex​ food. They serve delicious burritos and tacos. My favorite was ​the ​crispy shell tacos filled with beans, grilled vegetables, mild salsa ​and ​with lettuce and guacamole topping​s​. This Vegetarian Tacos is so easy to make and packed with full of healthy ingredients.

   Ingredients needed

   Hard Taco Shells (available readymade) -10 shells
   Refried Beans as needed
   Salsa as required

   Toppings

   Guacamole as needed (available readymade)
   Romaine lettuce leaf -3-4
   Olives -1 or 2 per tacos
   Shredded Cheddar cheese or any other cheese

   For bell pepper

   Olive oil -2 tsp
   Bell peppers- all colors -1 cup
   Pepper powder as needed
   Salt as needed
   Taco seasoning -1/2 tsp

Preparation

Remove seeds and ribs and thinly slice bell pepper. Heat olive oil in a pan, add bell pepper, needed salt and pepper and cook until tender. Add taco seasoning. If you do not have taco seasoning, just add salt and pepper powder. Keep it aside. You can also roast bell pepper in oven adding salt, pepper powder and olive oil.

Keep it aside.

Taco Shells – Prepare taco shells as instructed on the packet or just heat taco shell in oven for 2-3 minutes at 120 degree C or till tacos are warm and crisp. In India, you get ready made tacos in all big departmental stores.

Chop romaine lettuce into fine strips and keep it aside.

All the ingredients for the vegetarian tacos are kept ready below- Hard taco shells, refried beans, salsa, roasted bell pepper, olives, lettuce, guacamole and cheese.

How to assemble Tacos

Place a scoop of refried beans into a taco shell as shown in the picture below.

Then place 2-3 tsp of salsa on top of it.


Fill a layer of roasted bell pepper, followed by lettuce leaves.


Top it with Guacamole, cut olives and shredded cheese.


Mildly spiced and flavorful Vegetarian Mexican Tacos is ready. Serve immediately.

This also makes a quick dinner. Repeat the same process for the rest of the tacos.
