Cake Pops-Cake Pops Recipe from Scratch-How to make Cake Pops

Cake pops are very popular and also easy to make. According to wiki – A cake pop is a form of cake styled as a lollipop. Cake crumbs are mixed with icing or chocolate, and formed into small spheres or cubes in the same way as cake balls, before being given a coating of icing, chocolate or other decorations and attached to lollipop sticks. Cake pops are a great way to use up leftover cake or cake crumbs. You can make these for birthday parties or give away as little gifts. Kids will love them a lot. Cake pops can be make with any cake or frosting. Today we will learn how to make cake pops from scratch at home following this easy recipe.

Ingredients needed

   Sifted all purpose flour – 1 1/2 cup
   Baking powder – 1/2 tbsp
   Salt – 1/4 tsp
   Unsalted butter – 1/2 cup (113 grams)
   Granulated white sugar – 150 grams (1/2 cup  + 2 tbsp)
   Eggs – 2 large
   Vanilla extract – 1 tsp
   Milk – 1/2 cup (at room temperature)

For the frosting

   Icing sugar – 1 cup
   Butter – 1/4 cup unsalted
   Vanilla essence – 1/4 tsp
   Milk – 1/2 – 1 tbsp

For the cake pops and decoration

   Plastic wrap
   Sprinkles
   Styrofoam
   Lollipop sticks
   Candy coating (any color)

   Mini oreos (optional)
   Edible marker (optional)
   Candy eyes (optional)

Preparation

Sift/sieve all purpose flour (maida) with baking powder and salt.
Grease and line a baking tray (9-inch x 2 inch height) with parchment paper.
Powder sugar and keep it ready.
Preheat the oven at 180 degree C for 15 minutes.
Bring all the ingredients to room temperature.

Step 1 – First we will make the Vanilla cake

Beat butter until soft and creamy.
Add sugar and beat until light and fluffy.
Add vanilla extract and beat until combined.
Add eggs, one at a time and beat well after each addition. Batter might look curdled but once you beat well, batter will be smooth.
Add flour mixture (3 additions) and milk (2 additions) alternatively, starting and ending it with flour.
Add flour (1 st addition) and beat on low speed until combined. You can also use a spatula and fold in the flour.
Now add half of the milk (1 st addition) and beat on low speed until combined.
Then add flour (2 nd addition) and beat until combined.
Add the rest of the milk (2 nd addition) and beat until combined.
Finally add the rest of the flour (3rd and final addition) and beat on low speed until well combined. Our vanilla cake batter is ready.
Pour the batter into a parchment lined baking tray. Tap the tray for the batter to settle evenly.
Bake in a preheat oven for 27-35 minutes or until a toothpick inserted in the center of the cake comes out clean. Do not over bake the cake. The cake should spring back when pressed slightly in the center.
Now our cake is baked well. Let it cool in the pan for 10 minutes. Then invert the cake on a wire rack to cool completely. Our vanilla cake is ready.
Once the cake is completely cooled, remove the parchment paper and crumble the cake in such a way that it looks like bread crumbs. You can do it with your hands or with a blender. (I did it in a blender, so I got uniform crumbs)

Step 2 -Now we will prepare the frosting

Beat butter until smooth and creamy. Add vanilla extract and mix until combined.
Add icing sugar, gradually, a spoonful at a time and beat on low speed after every addition.
Add 1/2 tbsp of milk and beat to combine. Now beat the frosting really well for 5 minutes or until light and fluffy. You may add more milk or icing sugar to get the right consistency.

Step – 3 Making of the Cake Balls 

We have our cake crumbs and the frosting ready. (see picture below)
Now add only needed frosting (approximately 1/3 cup -1/2 cup) just enough to hold the crumbs together. Note – too much frosting will make the cake balls soggy and too little frosting will make the cake balls crack or fall apart.
So the amount of frosting depends on the type and texture of your cake. Use your hands to mix the cake crumbs and frosting so that you will know when to stop adding frosting.
Now make even sized smooth balls out of the mixture. I made a few hearts also. Place the balls on a parchment paper lined baking tray.
Cover it with a cling wrap and refrigerate for about 2 hours or until firm. The good thing is that these cake balls can be refrigerated 3-4 days, before dipping in the candy. So you do not have to make everything on the same day.
I used candy melts from Wilton. If you cannot get candy melts, you can dip the cake pops in chocolate and decorate it with sprinkles.
These are the few things, I used for cake pop decoration but you don’t need all these.

4.Preparation of candy coating

Melt candy melts/candy coating over a bowl of simmering water (double boil).
If the candy coating is too thick, you may add 1/2-1 tbsp of any flavorless oil to get the right consistency. Candy coating should be smooth and fluid.
Now the candy coating is ready.  Take the cake balls from the refrigerator. Dip the lollipop stick about 1 cm into the candy melt and insert it into the cake balls half way through. Do not insert it fully as the balls will crack or fall apart. After inserting the stick into the cake ball, insert the lollipop stick with the cake balls into the styrofoam for drying.
After it has dried, dip the cake balls one at a time into the candy coating, then lift it to let the excess coating fall off back into the candy mixture.
Gently turn the pops holding it with your hand to get even coating. Then you can sprinkle/place candy sprinkles on the still wet cake pops.
After sprinkling the candy sprinkles, insert it in the styrofoam for the cake pops to dry completely. They have to dry upright.

5. How to Decorate Cake Pops

You can use finely chopped nuts, sparkling sugar, edible glitters etc for decorating the cake pops.
Once they are dry, you can also use any edible decoration to decorate the cake pops.
With a toothpick, I slightly pull out the candy coating when it was wet to give a hairy effect and I have used candy eyes for these monster. They look lovely isn’t it (picture below).
You get different colored candy melts. You can use any colored candy melts and prepare it in the same method as mentioned under “preparation of candy coating” above.

I used big and mini oreo biscuits and edible marker. I did not have the patience for it to dry. So I used the marker to draw the mouth when the cake pops was a little wet (so not done properly). Wait for it to dry and then draw anything you want.

I really enjoyed making these cake pops like a child. I packed it and gifted to kids in our neighbourhood and was so happy to see the joy on their faces.
