Ghee Rice-Neychoru Recipe

Ghee rice is a flavorful dish prepared with ghee, rice and other spices. It is very simple and easy to make. It goes well with any spicy gravy.

Ingredients

Ingredients needed

  • 1 cup Basmati rice or jeeraka samba rice
  • 1 Onion thinly slices (optional)
  • Salt needed

For the seasoning

  • 2 tbsp Ghee/Clarified butter
  • 2 inch Cinnamon
  • 2 Cardamon
  • 2 Cloves
  • 1 Bay leaf
  • 1 Star anise (marati mokku)
  • 1 tsp Fennel seeds
  • 1 tsp Cumin seeds
  • 6 Cashew nuts

For Garnishing

  • 10 Raisins (optional)

Instructions

Preparations

  1. Soak Basmati rice in water for 20 minutes, drain the water and keep it aside.

Method

  1. Heat ghee in a pan, add all the spices,(cinnamon, cardamom,cloves,bay leaf and star anise, fennel seeds, cumin seeds), then add onions and fry till they turn golden brown.

  2. Now add the drained rice and fry for a few minutes, so that the rice is well coated with the ghee.

  3. Add 2 cups of boiling water, needed salt and cook until rice is done.

  4. When rice is done fluff it with a fork and serve hot with any spicy gravy or vegetable kurma.

Recipe Notes

Note –

You can pressure cook rice or cook it in a rice cooker or in a pan with a tight lid.

Variations –

You can omit onions, if you do not prefer.

You can add a handful of peas or mint leaves along with rice and cook, if you feel it is too plain.

You can fry cashew nuts and raisins in ghee and garnish ghee rice with it .

You can garnish it with fried onions .
