Ghee rice also known as neychoru is one of the most simplest and easiest recipe. It is a flavorful dish prepared with rice, ghee and spices. It can be prepared in just 10-15 minutes. It needs a spicy gravy to go along with it. I prepared vegetable korma as an accompaniment and also packed as lunch for my daughter. She loved it very much.  Ghee rice-How to prepare Ghee rice
Serves: 2

Ingredients needed

Basmati rice or jeeraka samba rice – 1 cup
Onion – 1 thinly sliced
Salt needed

For the seasoning

Ghee/Clarified butter – 2 tbsp
Cinnamon – 1 inch piece
Cardamon – 2
Cloves -2-3
Bay leaf -1
Star anise -1 (optional)
Fennel seeds – 1 tsp
Cumin seeds – 1 tsp
Cashew nuts – 10

For Garnishing

Raisins -15 (optional)

Preparation

Soak Basmati rice in water for 20 minutes, drain the water and keep it aside.

Method

1.Heat ghee in a pan, add all the spices,(cinnamon, cardamom,cloves,bay leaf and star anise, fennel seeds, cumin seeds) then add onions and fry till they turn golden brown.

2.Now add the drained rice and fry for a few minutes, so that the rice is well coated with the ghee.

3.Add 2 cups of boiling water, needed salt and cook until rice is done.

4.When rice is done fluff it with a fork and serve hot with any spicy gravy or vegetable korma.

Few Side dish suggestions for Ghee rice

Vegetable Kurma
Cauliflower kurma 
Aloo matar gravy
Mirchi ka salan 

Note –

You can pressure cook rice or cook it in a rice cooker or in a pan with a tight lid.

Variations –

1.You can add a handful of peas or mint leaves along with rice and cook, if you feel it is too plain.

2.You can omit onions, if you do not prefer.

3.You can fry cashew nuts and raisins in ghee and garnish ghee rice with it .

4.You can garnish it with fried onions .
