Butter beans/Lima beans curry

Butter beans is also known as Lima beans. I love butter beans prepared in any form. I love to prepare sambar, kuzhambu, curry, korma using this vegetable. This curry can be had as a side dish for rice and is also ideal for evening snack. Today we will learn how to make butter beans curry following this easy recipe.

Butter Beans Curry-Sundal


Butter Beans Curry

 Prep Time : 10 mins

 Cook Time : 15 mins
 Serves: 2

 Author:Padhu Sankar   Ingredients needed

   Butter Beans -1 cup
   Onion -1
   Tomato -1 (big)
   Green chilli -1
   Ginger -1 inch piece (finely chopped)
   Salt as required

Spice Powder

   Turmeric powder
   Cumin powder/Jeera Powder -1/2 tsp
   Coriander Powder -2 tsp
   Chilli powder -1/2 tsp

 For the seasoning

   Oil -2 tsp
   Cumin seeds -1/4 tsp

For Garnishing

   Coriander leaves

Preparation

Finely chop onion, tomato, green chilli, ginger and keep it ready.
Pressure cook butter beans with a little salt and needed water until soft.

Method 

Heat oil, add  cumins seeds, when it sizzles, add onion, ginger, green chillies and sauté until onions becomes transparent.
Then add tomatoes and sauté for a few more minutes.
Add turmeric powder, jeera powder, coriander powder, chilli powder, cooked butter beans, needed salt and cook covered until the raw smell of the spices goes. You can sprinkle a little water and cook.
Garnish with coriander leaves and serve hot butter beans curry as a side dish or as a tea time snack.
This can also be given to kids as after school snacks. It is very healthy and filling.
