Brinjal Tomato Gravy for Chapati

   Ingredients needed

   Brinjal (eggplant) – ¼ kg (cut lengthwise)
   Onion – 1 big
   Tomato -2 ripe and juicy ones
   Green Chilli – 1
   Salt needed

   Spice Powder

   Turmeric Powder –a pinch
   Coriander powder – 2 tsp
   Cumin/jeera powder – 1 tsp
   Chilli powder -1/2 tsp

   For the seasoning

   Oil -1 tbsp
   Mustard seeds -1/4 tsp
   Cumin seeds -1/4 tsp
   curry Leaves -a sprig

Preparation


Chop onion and tomatoes finely. Cut brinjals lengthwise.

Method

Heat a tbsp of oil and add mustard and cumin seeds, when it splutters, add curry leaves and finely chopped onions.

Sauté until onions turns transparent on medium heat.Keep stirring continuously.

Add slit green chillies, chopped tomatoes and cook till tomatoes become mushy.

Then add all the spice powder and salt needed.

Add brinjals and saute for 2-3 minutes. Then add ½ a cup of water and pressure cook for 1 whistle only.

When the pressure subsides, open the cooker, mix everything well, garnish with coriander leaves and serve hot with rotis or parathas.

How to make Brinjal Penguins

Select long purple variety brinjals. Scrap off the front so that it is white in color there. Slit at both sides of the brinjal to form wings.Trim the stem and bend a little to form beak. Stick eyes. Your brinjal penguins are ready.
