Pinto Bean Salad-Easy Salad Recipes

Myself and my children love all kind of salads and we can have it any time of the day. I used to have salad even as a snack, if I am hungry in between meals. When you make salad, make sure that you use organic vegetables as they are free from pesticides. Also use fresh vegetables for making salad. Most salads are low in calories and can help you lose weight. As salads are rich in fiber, they help to reduce cholesterol and also prevent constipation. Having a bowl of salad everyday keeps us energetic, refreshed and of course healthy. Today we will learn how to make pinto bean salad following this simple recipe.

Pinto Bean Salad

   Ingredients needed

   Pinto Beans – 1/2 cup
   Bell pepper/capsicum (green) -1/2 cup
   Bell pepper (red) -1/3 cup
   Bell Pepper-(yellow) -1/3 cup
   Lettuce (torn) -1/2 cup
   Steamed Broccoli -3-4 florets

   Olive oil -1 tbsp
   Fresh Lemon Juice -1 tbsp or as needed
   Pepper powder to taste
   Salt to taste

Preparations


If using dry pinto beans, wash and soak it overnight. Pressure cook will a little salt and needed water for 3-4 whistles or until soft. Drain the water if any and keep it aside.

If using canned beans, skip the above steps, just rinse it well and use it.

Method


In a large bowl, whisk together olive oil, salt, pepper powder and fresh lemon juice with a fork.

Add pinto beans, all colored bell pepper, broccoli, lettuce leaves to the above and toss well to combine You can adjust seasoning as per your taste. I added a little dried basil and oregano which is optional.

Serve chilled or at room temperature.

Enjoy making this colorful and protien rich salad. It is delicious and easy to whip up.
