Tapioca Stir Fry-Kappa Curry-Maravalli Kizhangu Stir Fry

Tapioca root/Cassava root is known as “Maravalli kizhangu” in Tamil and “Kappa” in Malayalam. It is also commonly known as yucca and cassava. They are packed with carbohydrates. Topioca helps to gain weight, so if you are trying to lose weight, it might not be a good option to add to your diet.  It is a rich source of dietary fiber. Tapioca also contains a significant amount of B-complex vitamins, calcium and phosphorus. Today we will learn a simple Kerala style Kappa stir fry following our easy recipe.

Tapioca Fry-Kappa Curry

   Ingredients needed

   Topioca root -2 medium size
   Pearl Onions – 1/3 cup chopped
   Red Chilli – 3
   Green chilli – 2 slit
   Turmeric powder – 1/4 tsp
   Grated coconut – 2-3 tbsp
   Salt to taste

   For the seasoning

   Oil – 3 tsp
   Mustard seeds – 1 tsp
   Curry leaves – a sprig

Preparation


Remove the skin of tapioca root. Cut it lengthwise and remove the vein that passes in the center (pointed with an arrow mark in the picture below). Wash it well. Then cut it into cubes or medium sized pieces.


Cook tapioca with enough water and salt needed until soft. Once cooked, drain the water completely and keep it aside.

Method


Heat oil in a pan, add mustard seeds, when it splutters, add red chillies, green chillies and curry leaves.


Then add onions, turmeric powder and saute until onions turn transparent. Add grated coconut and saute for a few more seconds.

Add the cooked tapioca root, salt needed and mix well. Cook for another 2-3 minutes.


Serve hot with steamed rice or any spicy gravy or chutney. It is quiet filling as it is a rich source of carbohydrates.

  • Hello madam, How long should we cook Tapioca?? Or if in cooker how many whistles for dat to cook?

    • It depends on the tapioca root. You can cook for 1 or 2 whistles in the pressure cooker. If you find it is not properly cooked with 1 whistle, then cook for 2 whistles. You can also cook in a pan with sufficient water until the tapioca root is tender.
