Tomato Rice

Tomato rice is a quick and tasy dish prepared with ripe tomatoes. It is perfect for a quick lunch and for packing in lunch box. It is very easy to make.Whenever I feel lazy to cook, my choice is usually Tomato rice. It is very simply to cook and tastes delicious.My children love this tomato rice a lot. Today we will learn how to make tomato rice following this easy recipe.

Tomato is is a quick and easy dish prepared with tomatoes and spices. It is perfect for a quick lunch and can be packed in lunch box.

Servings: 2 people
Ingredients
  • 1 cup Basmati Rice
  • 4-5 Tomatoes Juicy ripe ones
  • 2 Onion medium size chopped
  • 2 Green chillies slit
  • 1 tsp Ginger garlic paste
  • 2 tsp Sambar powder
  • 1/4 tsp Turmeric powder
  • Salt as needed
For the Seasoning
  • 3 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 pinch Asafoetida
  • Curry leaves a sprig
Instructions
  1. Soak Basmati rice for 20 minutes. Drain water, add 2 cups of hot water and cook rice until soft.

  2. Take juice of 4 tomatoes using a blender and keep it aside.

Method
  1. Heat 2-3 tbsp of oil in a kadai and add the ingredients mentioned under 'for the seasoning'.

  2. Add onions and saute till it turns translucent.

  3. Add green chillies and ginger-garlic paste. Saute for a few more minutes.

  4. Then add tomato juice, turmeric powder, chilli powder or sambar powder and salt needed. Cook until oil separates.

  5. Add needed cooked rice to the tomato gravy and mix well.

  6. Garnish with coriander leaves. Serve hot with papads, potato chips or raita.

You can use regular rice or even leftover rice for this recipe.

If using chilli powder, add 3/4 tsp chilli powder and 1-2 tsp of coriander powder for best results.

Add needed cooked rice to the mixture, according to your taste.

Preparation

Note – You can use ordinary regular rice or even leftover rice for this recipe.

    Hi Padhu..juice of Tomatoes means after putting tomatoes in blender we have to take the juice using stainer or you mean tomato puree?

      Just blend fresh tomatoes and add. No need to strain it.

    Can I prepare the sabzi in the cooker then add rice then pressure cook it so that I use only one cooker ?

    Today I cooked tomato rice , it came out good ,but romba karam ,I used 4 tomatoes as u said do I need to add more for two people.Also will it become more tasty if I add ginger garlic paste extra(I used 1 tsp),Reply pls ,Thanks for ur wonderful blog.

      You must use 4 juicy big tomatoes. Karam you have to adjust to your taste. When you use store bought chilli powder, you have to use very less. I have used only my homemade sambar powder which is not hot. Yes you can add ginger garlic paste if you like. I do both ways with ginger garlic and without ginger galic .Both taste awesome!!     Also how much rice to be added to the mixture, as is written 'Add needed Rice'.
    That means not all the rice to be added.

      You can taste the tomato rice and if you feel you need more rice, you can add. Thought I cook 1 cup of rice for this tomato rice, I will not mix everything. I set aside some rice and add the rest because I like it a little spicy.

    Hi Padhu. I regularly prepare tomato rice following your recipe. And it has become a fabulous addition to my kitchen. My husband too likes it a lot. I prepare many other recipes from your blog. Most of the time they come out very well. Your contribution is invaluable. As a suggestion Why don't you add microwave and air fryer cooking in your blog.     Made it . Was delicious. The coriander makes it very flavorful . I grinded all the masala before adding rice using a hand blender . I use your recipes a lot though I haven't commented earlier. Thank you for sharing them.
