   Potato – 1
   Onion- 1 (big)
   Tomato -1

   Spice Powder

   Cumin/jeera powder -1 tsp
   Coriander seed powder -1 tsp
   Garam masala powder -1/2 tsp
   Chilli powder -1/2 tsp
   Salt to taste

   Oil -2 tbsp
   Cumin seeds -1/4 tsp

Preparation

Peel potato and cut it lengthwise.

Cut onion, capsicum and tomato also lengthwise. Remove the seeds for tomato.

Method

Heat oil in a kadai, add cumin seeds, when it sizzles, add onions and saute till they turn translucent.

Add potatoes and cook covered stirring inbetween. When potatoes are half cooked, add capsicum. You can sprinkle water in between.

Add coriander powder, jeera powder, garam masala powder, chilli powder and salt needed.

Cook capsicum for a few minutes and then add tomatoes and continue to cook for a few more minutes. Do not forget to stir 2 or 3 times in between for even cooking.

Do not overcook the capsicum as it will not taste good. This simple dish goes well as a side dish with roti and rice.

Yes, maida is not good for health. It is used only for thickening. Try using wheat flour or you can even skip adding maida.
