Homemade Granola Bars-Easy Granola Bars Recipe

These granola bars are sweet, soft, chewy, healthy, delicious and so easy to make. These no bake healthy granola bars are great for breakfast on the run or as a snack with a cup of tea or coffee. You can even pack these in your kid’s snack box. Kids will love it very much. When you make these at home, you can customize it by adding your favorite dry fruits, nuts or seeds. Moreover it has no chemicals, preservatives or any added colors. These granola bars were adapted from here. Today we will learn how to make no bake granola bar at home following this easy recipe with step wise pictures.

Homemade Granola Bars

   Ingredients needed

   Rolled Oats-Old fashioned Rolled Oats – 2 1/2 cup
   Almonds – 1/2 cup chopped
   Honey – 1/3 cup
   Butter – 1/4 cup (50 grams)
   Brown Sugar – 1/4 cup
   Salt – a pinch
   Vanilla essence – 1 tsp
   Dried Cranberries – 1/2 cup
   Raisins – 3 tbsp
   Mini chocolate chips – 1/4 cup + 2 tbsp

Preparation


Chop almonds roughly into 3 or 4 pieces.

Coarsely chop dried cranberries and keep it ready.

Line bottom and sides of a 9 inch pan with parchment paper and keep it ready.

Dry roast oats until lightly toasted. Dry roast nuts also separately. You can also bake for 5 minutes at 180 degree C until lightly toasted.


In a bowl combine oats and nuts together.


In a pan, add butter, honey, brown sugar, salt, vanilla essence and cook on medium heat.

Once it starts to bubble, reduce the heat, cook for another 1 minute and switch off the heat.


Add the toasted nuts and oats to the above and mix well until well coated. Leave it to cool for 5 minutes.

Add cranberries, raisins, 1/4 cup chocolate chips and mix well. I had some leftover candied cherries, so I added that also. (As I told you this granola bar recipe is very flexible, you can add any nuts or dried fruits of your choice). If the chocolate chips melt, it doesn’t matter.


Transfer the mixture into the prepared pan and press it hard with a spatula or with your hands. If you do not press it well, the bars will not hold together and will fall apart. So this step is very important.

You can scatter the remaining 2 tbsp chocolate chips on top and refrigerate for 2-3 hours.

After 2 – 3 hours, lift the parchment paper, remove the block and cut it into bars and enjoy.


Storage – Store it in an airtight container in the refrigerator for a week.

Note – I halved the recipe above and got 6 bars. You can try it with dried cherries, apricots, pecans, raisins, walnuts, pistachios, unsweetened coconut etc.

    Homemade Granola Bars looks great. But, unfortunately you are cooking honey in this recipe. I just want to give you some info about cooking honey.
    Honey should never be cooked/ heated (Many of us know this but still we use it for cooking just for its taste & texture and thinking it is better than sugar). Ofcourse, honey is better than sugar but not cooked honey. Using honey in bars,cereals are quite popular but cooked honey is toxic. It is not an immediate poison but gets stored in the body as toxins(undigested material) and becomes root cause for all health issues.     • Yes, I too have read that long time back but never took it seriously.As you say using honey in bars and cereals are very common. Thank you for the info. You can use maple syrup or jaggery syrup instead of honey. We just need the oats and nuts mixture to hold together. Jaggery does that well.

  • It looks same like groundnut chikki but it is rich with dry fruits. I would like to go with your suggestion of jaggery instead of honey.

    • May be your jaggery syrup consistency was not perfect. You might have overcooked the syrup. Check my peanut balls recipe for the correct jaggery syrup consistency.
