Sai Bhaji-Sindhi Sai Bhaji Recipe-Palak Recipes-Spinach with Vegetables

Sai Bhaaji is a traditional Sindhi dish prepared with greens, dal and vegetables. I prepare this often at home and it comes under my list of comfort food. It is wholesome and nutritious with the goodness of spinach, vegetables and lentils. It is very simple to make and is healthy and satisfying. Today we will learn how to make Sindhi Sai Bhaji following this easy recipe with step wise pictures.

   Ingredients needed

   Palak -2 cups chopped
   Bengal gram-chana dal -1/4 cup

   Onion -3/4 cup chopped
   Ginger -1 inch piece
   Green chilli -2
   Tomato -1/4 cup chopped
   Carrot -1 small
   Brinjal -3/4 cup
   Potato -1/2 cup or 1 medium

   Turmeric powder -1/4 tsp
   Chilli powder -1/2 tsp
   Salt needed

   For the seasoning

   Oil -1 tbsp
   Cumin seeds/jeera -1 tsp

Preparation


Wash and chop spinach. Finely chop green chillies and ginger.

Peel the skin and cut carrot and potato into cubes or medium sized pieces. Cut brinjal also into medium sized pieces.

Soak bengal gram (kadalai paruppu/chana dal) for 2 hours.

Method


Heat a tbsp of oil, add cumin seeds, when it splutters, add finely chopped onion, finely chopped ginger and green chillies.

Saute until onions turn transparent.

Add chopped tomatoes, brinjal, carrot, potatoes, spinach, bengal gram, turmeric powder, salt needed, chilli powder and 3/4 cup of water.


Pressure cook for 1 or 2 whistles. You can do everything directly in a cooker. (I did it in a kadai and then transferred to a cooker just to show you the pictures clearly)

Once the pressure subsides, open the cooker and mash the contents slightly.

Serve piping hot with rotis or steamed rice or a simple pulao.

Note – Those who do not have a cooker can do it in a pan, but will take a longer time.
