Pina Colada Overnight Oats-Pineapple Coconut Overnight Oats-Vegan Overnight Oats

Breakfast is the most important meal of the day and it is not good to skip breakfast. But it might not always be possible to make a healthy breakfast especially if you are a busy person. Overnight Oats are perfect and healthy grab-and-go breakfasts that can be prepared the night before. They are so easy to make. You can refrigerate them in individual jars or bowls for a quick, healthy and portable breakfast. This is one of my most favorite as I love pineapple-coconut milk combination. Today we will learn how to make flavorful and refreshing Pineapple Coconut Overnight Oats following this easy recipe.

Pineapple Coconut Overnight Oats

   Ingredients needed

   Rolled Oats – 1/3 cup
   Pineapple pieces – 1/2 cup
   Coconut milk – 1/2 cup
   Honey or any sweetener to taste
   Almonds – 6 blanched and slivered
   Grated coconut – 2-3 tbsp

Preparation


Clean and cut the pineapple into small pieces. Blanch and sliver the almonds.

Use readymade coconut milk or you can extract coconut milk at home. Check out how to make coconut milk at home.

Method

In a bowl or mason jar, add the oats (I used old fashioned oats).

Add the pineapple pieces. Add thick coconut milk and honey. Since the pineapple I used was very sweet, I added just a tsp of honey.

Top it with grated coconut and almonds. Refrigerate overnight or for 8 hours.

In the morning top it with more pineapple pieces and grated coconut. You can adjust the consistency to your liking by adding more coconut milk. Enjoy!!

Notes – You can also use quick cooking oats/instant oats but that requires only 30 minutes of soaking.

This recipe can be made 2 or 3 days ahead of time.

Shelf Life – You can store it in the refrigerator for a maximum of 3 days.

    • No, they are not the quick cooking oats.It is called old fashion oats or rolled oats. I do not know if Quaker has that product. I bought Bob red mills old fashioned rolled oats.

      Jhothi - cay you can substitute with any fruits. I will soon share it.

    • Yes, Quaker's does make the "Old Fashioned" Rolled Oats as well as the Quick Oats and the instant variety. Hopes this helps. 8- )

    Thanks for the recipe. I tried it, though turned out bitter in the morning.
    Is it pineapple or am I missing some step?

    I didn't have coconut milk, but had coconut cream, hence I added coconut cream + normal cow milk.

    • It might be due to the pineapple. Get sweet pineapple. Smell and then buy. It was awesome and I enjoyed it a lot. So I suggest that you follow the recipe exactly.
