Pepper Cumin Rice-Milagu Jeeraga Sadam-Milagu Sadam Recipe

Milagu sadam can be made in a jiffy, if you have cooked rice ready. This pepper cumin rice is not only easy to make but has lot of medicinal properties. Cumin and pepper has antioxidant and antibacterial properties and is used to cure common cold, mild digestive problems, improves appetite and also enables weight loss. Both pepper and cumin has anti cancerous properties. Today we will learn how to make milagu jeeraga sadam following this easy recipe.

Pepper Cumin Rice-Milagu Jeeraga Sadam

   Ingredients needed

   Cooked Rice – 2 cups
   Whole black peppercorn/milagu – 1 tsp
   Cumin seeds-jeeragam – 1 tsp
   Salt to taste

   Ghee/clarified butter – 2 tsp
   Cashew nuts – 7-8

   For the seasoning

   Sesame seed oil/nallennai – 3 tsp
   Mustard seeds – 1 tsp
   Urad dal – 1 tsp
   Bengal gram/channa dal – 3/4 tsp
   Curry leaves – a sprig

Preparation 


Cook rice in such a way that each grain is separate. You can use white rice or brown rice or even millets like varagu, kuthiraiwali or saamai. Spread it on a plate to cool.

Heat a tsp of ghee and fry cashew nuts until golden brown. Keep it aside.

In a kadai/pan, heat 1/2 tsp of oil, saute cumin seeds and peppercorns on medium heat until you get a nice aroma. Remove from heat and leave it to cool. Then powder it coarsely and keep it aside. Our milagu jeera podi is ready.

Method 


In the same pan, add the rest of the oil and heat it. Add mustard seeds, when it splutters, add urad dal, bengal gram (kadalai paruppu) and curry leaves.


When dal turns golden brown, lower the heat and add the pepper + cumin powder (milagu jeera podi).

Saute for a few seconds, add salt needed, cooked rice and a tsp of ghee.


Mix well so that the rice is well coated with the pepper cumin powder and the seasoning. Add cashew nuts and turn off the heat. Enjoy it with papads.


Best side dish for Milagu jeeraga sadam –  Personally I feel vadam, appalam, potato roast and any kuzhambu goes well with milagu jeeraga sadam. You can even crush appalam and mix it to the pepper cumin rice before serving.
