Kadalai Maavu Rice Murukku-Besan Flour Chakli Recipe-Easy Diwali Snacks

Gram flour (kadala maavu in Tamil) murukku/besan chakli is prepared with gram flour, rice flour and flavored with sesame seeds. It is so easy to make and the taste is very addictive. It is perfect with a cup of tea or coffee or for any festive occasions. If you are searching for a very easy and quick murukku recipe for Diwali, then this murukku fits the bill perfectly. Today we will learn how to make besan (kadalamaavu) murukku following this easy recipe with step wise pictures.

Kadalai Maavu Rice Murukku-Besan Chakli

   Ingredients needed

   Rice flour – 1 cup (sieved)
   Besan/kadalai mavu – 1/2 cup (sieved)
   Unsalted Butter – 1 tbsp
   Sesame seeds – 1 tsp
   Hing/asafoetida – a generous pinch
   Salt – 1 tsp flat
   Hot oil – 2 tbsp
   Chilli powder – 1/2 tsp (optional)

   Oil for deep frying
   Murukku press

Preparation


I used homemade rice flour for making this murukku. You can use store bought rice flour also. Check my homemade rice flour recipe.

In a wide bowl, mix together rice flour and gram flour/besan.

Add sesame seeds and butter.


Heat 2 tbsp of oil and add to the flour. Oil should be very hot.


Add hing, salt and mix everything well with your fingers.


Then add water little at a time and make a soft pliable dough.( I added 1/2 cup + 1 tbsp of water). The quantity of water will change according to the quality of rice flour. Our murukku dough/maavu is ready.

Method


Grease the murukku maker with a little butter or oil. Then fit the 3 hole disc or 5 hole disc into the murukku press. Take a portion of  the dough and place it inside the murukku press. Then press it in a concentric circle to make murukku as seen in the picture below.

You can press it on greased ladles or small plates or even directly into the hot oil.


Heat oil in  a kadai. To check if the oil is hot, drop a small bit of dough into the oil, if it comes to the surface immediately, the oil is hot enough to fry the murukkus. Reduce the heat to medium.

Drop 3-4 murukkus into the hot oil (number of murukkus depends on the quantity of oil used). Do not disturb for the first few seconds.

Then flip over and fry both sides until golden brown and crisp. (Tips – Once the murukku is cooked the sizzling sound will reduce)

Once crisp, remove it from the oil using a slotted ladle and place it on a colander or paper towel to drain excess oil if any.

Note – If you have kids at home who are fond of murukkus, avoid adding chilli powder.

Storage and shelf life – Store the murukkus in an air tight container once it cools. Stays good for 10-15 days at room temperature.
