Wheat Badusha Recipe-Balushahi-Easy Diwali Sweets

Traditional Badusha is normally made with all purpose flour but I wanted to try badusha with wheat flour long since but it kept on delaying. Finally I made badushas with wheat flour and was surprised as the badushas were very soft and tasted very good. Just because they were soft and delicious, it has made its appearance here. Today we will learn how to make wheat flour badushas following this easy recipe with step wise pictures.

Wheat Badusha

   Ingredients needed

   Wheat flour – 3/4 cup
   Cornflour – 1 tbsp
   Vanaspati/dalda/thick ghee – 1/4 cup /50 grams
   Powdered sugar – 1 tsp

   Thick curd – 1 tbsp
   Cooking soda – 1/8 tsp

   For the sugar syrup

   Sugar – 1/2 cup
   Water – 1/4 cup

Preparation 


In a wide bowl, mix together, wheat flour, cornflour and thick ghee or dalda.

Mix with your finger tips until the mixture becomes like bread crumbs in texture. Add powdered sugar to it and mix with your finger tips.


Beat together or mix vigorously curd and soda together with your fingers until foamy. Mix at least for 6-10 minutes.


Add the wheat flour mixture to the curd mixture and make a soft dough using very less water (a spoonful at a time). Knead it well and cover it. Let the dough rest for 30 minutes.


Mix sugar in 1/4 cup of warm water and stir to let the sugar dissolve to some extent. Then switch on the flame/heat and boil the sugar syrup, stirring until you get a sticky consistency. It is known as “pisuku padam” in Tamil. Switch off the syrup.

Method 


Now divide the dough equally and make small smooth balls from each piece. There should be no cracks. Then press it slightly and make a dent in the middle.

Heat oil, drop a small bit of dough into the oil, if it raises to the surface immediatly, the oil is hot.

Now reduce the heat to low and fry 3-4 badushas depending on the quantity of oil used. Do not disturb for the first few seconds. Then gently stir, flip it over and cook the badushas until golden brown on both sides.


Once it turns golden brown, remove it with a slotted ladle and drop it into the warm sugar syrup. (sugar syrup should not be very hot).

Let is remain soaked in sugar syrup for 15-20 minutes.


Then remove the badushas from the sugar syrup. Once the sugar syrup dries a little, decorate it with colored coconut or chopped nuts.

    • Even I shall try it as it. With all purpose flour it came good twice but after that when I made it didn't turn out well.

    I tried this recipe. The diugh and the syrup looked perfect but when I deep fried the small balls, few of the balls broke into pieces when I tried to flip it to the other side. Do you know what went wrong?

    • The oil would not have been hot. Once the oil is hot, reduce it to medium and then add. If the oil is not hot, it will disintegrate.
