Mostly we are all busy in the mornings. Mornings are usually hectic with preparing breakfast, packing lunch, helping the kids get ready for school – whew! so much of work but we cannot compromise on the food. We want to have a healthy, nutritious and an easy-to-cook dish. Don’t worry – Here is a quick recipe which takes only 15 minutes to prepare. It is Poha pulao recipe fortified with vegetables-Simple yet satisfying dish. Today we will learn how to make poha pulao following this simple recipe.

Aval Pulao-Poha Pulao

   Ingredients needed

   Aval/Poha – 1 cup (beaten rice)
   Onion – 1
   Green chilli – 1
   Ginger-garlic paste – 1/2 tsp
   Salt needed

   Vegetables

   Carrot – 1 small
   Potato – 1/2 a potato
   Beans – 3-4
   Cabbage – 1/4 cup
   Peas – 1/4 cup (cooked)
   Cauliflower -4 florets (optional)

   For the seasoning

   Oil – 2-3 tsp
   Cinnamon -1 small bit
   Cloves -2

Preparation

Wash aval /Poha under running water 2-3 times and drain the water in a colander. Fluff it with a fork and keep it aside.

Finely chop onions and green chillies. Chop all the vegetables and keep it ready. You can also add capsicum, if you want.(All the vegetables together should be around 1/2 -3/4 cup).


Method

Heat 2 tsp of oil in a pan/kadai, add cinnamon and cloves.Then add finely chopped onions and saute until onions turn transparent.

Now add finely chopped green chillies and ginger-garlic paste (or chopped ginger and garlic).Saute for few more minutes.

Then add all the vegetables, salt needed and cook until soft. (alternatively you can par boil the vegetables or microwave the vegetables separately and then add. In that case, you can add poha immediately.)

After the vegetables are cooked, add the poha/aval and mix gently.(picture 2). If you have bought the thick variety poha, sprinkle a little water and cook covered for 2-3 minutes.

Now your Aval Pulao is ready to be served.
