Vazhaithandu Soup-Plantain Stem (banana stem) Soup Recipe-Healthy Soup Recipes

This is a very simple and healthy soup prepared with tender plantain/banana stem. Plantain stem is rich in fiber, has cooling effect on the body  and helps in weight loss. Plantain stem is said to be a diuretic and helps detoxify the body. This soup is low in fat and is easy on the digestive system.  Today we will learn how to make clear, healthy and delicious plantain stem/vazhaithandu soup following this easy recipe.

Ingredients needed

   Plantain Stem -1 (2 1/4 cup chopped)
   Turmeric powder -a pinch
   Roasted Cumin powder -1/4 tsp
   Pepper powder to taste
   Lemon Juice to taste
   Salt to taste

   For the seasoning

   Oil-1 tsp
   Mustard seeds -1/2 tsp
   Curry Leaves -few tender ones
   Coriander leaves – 1 tbsp finely chopped

Preparation

Remove the outer layer and slice plantain stem thinly removing the fiber.Then chop it into cubes.Check out my post on Plantain Stem Mor Kootu to know how to remove fiber from plantain stem. Keep it in diluted buttermilk to prevent darkening until use.

Instructions

Pressure cook plantain stem with salt, turmeric powder and 2 cups of water for 3 whistles or you can cook it in a pan until soft.

Once the pressure subsides, open the cooker and strain the liquid. Keep this clear soup aside.

Grind the plantain stem with a little water or you can use liquid in which it was cooked and strain it. Discard the pulp. Add this liquid to the clear soup kept aside.

Bring the soup to boil. Heat a tsp of oil, add mustard seeds, when it splutters, add curry leaves and pour it on the soup.

Add jeera powder, salt (if required) pepper powder and lemon juice to taste.

Garnish with finely chopped coriander leaves. Serve hot or warm.
