   Ingredients needed

   Cauliflower – 1 medium size
   Turmeric powder – 1/4 tsp
   Onion – 1 finely chopped
   Green chilli – 1 slit
   Garlic- 4 cloves finely chopped
Black pepper powder – 3/4 tsp
   Salt to taste

   For the seasoning

   Oil – 1 tbsp
   Mustard seeds – 1 tsp
   Fennel seeds – 1 tsp
   Urad dal – 1 tsp
   Red Chilli – 1
   Curry leaves – a sprig

   For Garnishing

Coriander leaves – 1 tbsp finely chopped
Fresh Lemon juice – 1-2 tsp or as needed (optional)

Preparation

Wash and cut cauliflower into florets. Bring water to rolling boil, add 1/4 tsp of salt and turmeric powder to it. Add the cauliflower florets, switch off the heat and keep it covered for 4-5 minutes.

After 5 minutes, drain the water completely and pour cold water on the cauliflower to prevent it from getting cooked further.

Method

Heat oil in a pan, add mustard seeds and fennel seeds, when it splutters, add urad dal, red chilli and curry leaves.

When dal turns golden brown, add finely chopped onion, garlic and green chillies.

Saute until onions turn transparent.

Add blanched cauliflower florets, pepper powder and salt (sprinkle salt over it) needed. Cook covered until cauliflower brown slightly on the edges or for 5-6 minutes on medium heat stirring in between.

Garnish with coriander leaves and squeeze fresh lemon juice (if using). Mix well and enjoy with rice.

  • I made this recipe yesterday and it came out well . I wanted a simple and tasty cauliflower recipe for a long time and now I am so happy I got one. Thanks Padhu. You are awesome.

  • Hi,thanks for the recipe. The recipe looks very short and good for bachelors who want to cook easily.
I have a small clarification, after adding the cauliflower and keeping the lid some water is released , so should we keep cooking till the water is evaporated with the lid kept or remove the lid after some time and let the water evaporate ? My question is if water is there, how does it get fried ,please clarify.

    • Drain the water completely and add the cauliflower florets. If there is little water, cook until it evaporates uncovered.

  • The onions are loose in the end. I add onions for potatoes or any other vegetable fry, it usually sticks well to the vegetable. But with cauliflower, it remains loose. Would you recommend something for that?

    • If you cook until the cauliflowers are soft and be a little generous in oil, it will get mixed well.

  • Excellent recipes padhu.if I start typing a recipe my chrome is used to add padhu kitchen by itself.
