   Ingredients needed

   Roasted gram dal/Daaliya/Pottu kadalai – 1/2 cup
Powdered sugar – 1/4 cup (more if you want it very sweet)
   Ghee/clarified butter – 1 1/2 – 2 tbsp or as needed
   Cardamom powder – 1/4 tsp
   Cashew nuts – 12-15
   Raisins – 20-25

Preparation

Dry roast the roasted gram on medium heat just until hot to touch (Do not over roast it). Cool and powder it finely in a mixie.

Sieve the ground flour and keep it aside. Powder sugar finely. Sieve sugar also and keep it ready.

Method

In a large plate, add the sieved flour, sieved sugar and cardamom powder.

Mix well. I added lot of cashew nuts and raisins to give the maaladu some texture.

Heat a tsp of ghee and fry the cashew nuts (break it into 2-3 pieces) on low heat until golden. Add to the flour-sugar mixture.

In the same pan, fry the raisin on low flame until they puff up. Add to the flour + sugar mixture and mix well.

Heat the rest of the ghee and add to the above mixture. Mix well with a spoon and make balls out of the mixture when it is warm. If you are unable to make balls, add more ghee (little at a time) and make balls. When you are able to make balls, stop adding ghee.

Enjoy making delicious maaladu for this festive season. This also makes a perfect festive gift.
