Lauki Gravy Recipe-Quick Bottle Gourd Gravy in Pressure Cooker-Dudhi Gravy for chapathi

This is a very quick and simple gravy prepared with bottle gourd. It goes well with chapatis and parathas. When you do not have much time on hand, you can make this quick side dish in just 15-20 minutes. Today we will learn how to make low fat quick bottle gourd gravy following this easy recipe with step wise pictures.

   Ingredients needed

   Bottle Gourd – 4 cups chopped
   Potato – 1 medium size peeled and chopped
   Onion – 1 cup chopped
   Tomato – 1 cup chopped
   Ginger – 1 inch finely chopped
   Green Chillies – 1-2 slit

   Spice Powder

   Chilli powder – 1 tsp
   Coriander powder – 2 tsp
   Turmeric powder – 1/4 tsp
   Salt needed

   For the seasoning

   Oil – 2 tbsp
   Cumin seeds – 1 tsp
   Red Chilli – 1
   Cloves – 2
   Cinnamon – 1 inch piece
   Whole black peppercorns – 1/4 tsp
   Curry leaves – a sprig

   For Garnishing

   Coriander leaves – 2 tbsp finely chopped

Preparation

Peel the skin of bottle gourd and discard the seeds. If the seeds are very tender, you can use it. Chop it into cubes.

Finely chop onion, tomatoes and ginger. Peel the skin and cut potatoes into medium sized pieces.

Method 


Heat oil in a pressure pan or cooker, add cumin seeds, red chilli, cloves, cinnamon and peppercorns.

When cumin seeds sizzles, add finely chopped onions, ginger, green chillies and curry leaves.


Saute until onions turn golden brown. Add chopped tomatoes, turmeric powder, chilli powder and coriander powder.


Cook until tomatoes become soft. Add chopped bottle gourd, cubed potatoes and mix well so that it is well coated with the masala.


Add 2 cups of water, salt needed and pressure cook for 2 or 3 whistles.


Once the pressure subsides, open the cooker and cook for another 5 minutes on medium heat. You can adjust the consistency of the gravy by adding more or less water.

Garnish with coriander leaves and serve hot with roti or parathas.

Variations – You can also add 2 tsp sambar powder instead of chilli powder and coriander powder.
