Carrot Cake Recipe-How to make Carrot Cake

Carrot cake is moist, dense, soft and delicious with grated carrots, walnuts and cinnamon. It was a big hit in my family. We loved plain carrot cake itself, but if you prefer, you can decorate it with cream cheese icing. My suggestion is, do not prepare the cake without walnuts and cinnamon as they give nice flavor and taste to the cake. Today we will learn how to prepare carrot cake following this easy carrot cake recipe.

Carrot Cake Recipe

   Ingredients needed

   All purpose flour (maida)- 260 grams (2 cups)
   Baking soda – 1 tsp
   Baking powder – 1 1/2 tsp
   Salt -1/2 tsp
   Cinnamon powder- 1 1/2 tsp

   Egg – 4
   Granulated sugar – 1 1/2 cup (300 grams)
   Vegetable oil – 1 cup ( any flavorless oil)
   Vanilla extract – 2 tsp

   Walnuts chopped – 100 grams
   Finely grated carrot – 1/2 cup

Preparation

Preheat the oven for 15 minutes at 180 degree C.

Grease the baking tray and dust flour.

Method

Mix all the dry ingredients – Maida, baking soda, baking powder, salt and cinnamon together, sieve twice and keep it aside.

Beat eggs well until frothy.(I used electric beater)

Add sugar little by little and beat till sugar dissolves.

Add vanilla essence.

Then slowly add 1 cup of oil and beat it well.

Fold in flour gently until well incorporated.

Then mix in grated carrot and chopped walnuts.

Bake for 25-30 minutes at 180 degree C or until a toothpick inserted into the center of the cake comes out clean.

I halved the above recipe and I got 4 cupcakes and the cake below(5 “x 2 “)

My oven took 22 minutes to bake this cake – 20 minutes bottom coil and 2 minutes top coil
