Tutti Frutti Cake-Step by Step Recipe

My daughter wanted a cake with eggs, so I decided to bake this rich tutti frutti cake with orange flavor. The cake  was very soft and yummy. Though I have added orange juice for orange flavor, you can substitute with pineapple juice for Pineapple Tutti frutti cake.Since they are so colorful and delicious, they are favorite among kids. I have tweaked the recipe I found in Suhaina’s blog. These cakes do not need any frosting and are very simple to make. Today we will learn how to make Tutti Frutti Cake with eggs following this simple recipe.(Egg less version will be posted soon)

Tutti Frutti Cake Recipe 

Ingredients needed

All purpose flour/Maida – 1 cup
Baking powder – 1/2 tsp
Baking soda -1/2 tsp

Butter -100 grams

Sugar -1/2 cup + 1 1/2 tbsp (granulated white sugar)
Eggs -2
Tutti frutti -1/4 cup heaped
Orange juice – 3 tbsp (I used fresh juice)
Vanilla essence or Orange essence -1 tsp

Preparation

Preheat the oven at 180 degree C for 15 minutes.

Bring all the ingredients to room temperature.

Sieve together maida, baking powder and baking soda twice. Keep it aside.

Powder the sugar.

Dust or mix tutti frutti with a little maida. This is done so that the tutti frutti does not go and settle at the bottom of the cake.

Grease the baking tray with a little butter and dust flour/maida. If you are going to make cupcakes, grease and dust the cupcake moulds or line the cupcake moulds with cupcake liners.

Method

Beat butter and sugar until creamy. Then add eggs and beat nicely.

Now add half of maida and fold gently. Then add orange juice, rest of the maida, essence and the tutti frutti dusted with flour. Fold gently until well combined. Our cake batter is ready. (See picture below)

Pour the batter in a baking tray or cupcake moulds and tap the tray gently, so that the batter will spread evenly. Bake in a preheated oven for 25-30 minutes (180 degree C) or until a toothpick inserted in the center of the cake comes out clean.

 I got 6 cupcakes and a  small square cake which I baked in a 4 inch square baking tray for the measurement above.

Wow!! look at the picture of the soft and spongy cake below. Don’t they look colorful and gorgeous.

Note – If you want pineapple flavored cake, you can add 3 tbsp of pineapple juice instead of orange juice and a tsp of pineapple essence or vanilla essence.You can even use tropicana pineapple juice.
