Corn Capsicum Sandwich Recipe-Sandwich Recipes

This is a very healthy sandwich prepared with brown bread, corn and capsicum. It is easy to prepare, taste delicious and can be had as a breakfast or as an evening snack. You can serve this filling sandwich to kids after they return from school. It is a favorite among both kids and adults. Today we will learn how to prepare corn capsicum sandwich following this easy recipe.

Corn Capsicum Sandwich

   Ingredients needed

   Brown bread -6
   Butter or ghee for toasting

   Oil -2 tsp
   Onion – 1/2 cup finely chopped
   Tomato – 1/3 cup finely chopped
   Capsicum – 1/2 cup chopped
   Boiled Sweet corn kernels- 1 cup
   Chilli Powder -1 tsp
   Salt to taste
   Pepper Powder to taste
   Tomato sauce – 1-2 tsp (optional)

Method 

Heat oil in a pan, add finely chopped onions and saute until onions turn transparent.

Add tomatoes and cook for another 5 minutes.

Add chopped capsicum, cooked corn, chilli powder, salt, pepper powder and cook covered. Capsicum should retain its crunchiness, so see to it that you do not over cook it. Allow it to cool.

Apply butter on both sides of the bread, place 1-2 tbsp of this corn filling and close it with another buttered bread. You can have it as such or you can toast it.

Toast it in a sandwich toaster or in a tawa until golden brown. Cut it diagonally and serve hot. Repeat the same procedure for the rest of the bread slices.

Note – You can use any corn for this recipe.

Cutting the corners of the brown bread is optional.

If you want to have it without toasting it, apply butter only on one side of the bread, place 2 tbsp of the filling on the buttered side and close it with another bread with buttered side facing down.
