Creamy Spinach Soup Recipe-Palak Soup-Soup Recipes

Spinach is an excellent source of iron. It has antioxidant properties which protects the body from free radicals. Spinach or palak soup is very simple to prepare, nutritious and also delicious. This picture was waiting for more than a year to be posted. I have the habit of having more than 30-40 pictures in stock. Sometime I even forget and prepare the same recipe again. Anyway, Today I am going to share with you how to make spinach (palak) soup following this easy recipe.

   Ingredients needed

   Spinach/Palak -1 1/4 cup
   Butter – 3/4 tbsp
   Onion – 1/4 cup chopped

   Cornflour – 3/4 tsp
   Milk – 1/2 cup
   Salt to taste
   Black pepper powder to taste

   For Garnishing

   Cream -1/4 cup
   Whole wheat Bread croutons

Preparation


Wash spinach and discard the thick stem. Chop the leaves and keep it ready.

Method


Heat butter in a pan and saute onions until it turns transparent.

Add chopped spinach and saute for a few more seconds.

Add 1 1/2 cup of water and cook on medium flame for 10 minutes.

After it cools, blend it to a puree. Strain it using a soup strainer. (If using mixie, strain the water, (reserve that water) grind it and then add the water to the ground spinach paste. Strain the mixture.)


Mix corn flour to a little milk without any lumps. Then add the rest of the milk and mix well.

Reheat the soup. Add the milk + cornflour mix to the soup and bring it to boil on medium flame. Once it starts to boil, simmer for 5 minutes. Add salt and pepper powder to taste.

Switch off the flame and serve hot garnished with bread croutons and cream. Simple isn’t it??
