June 12, 2010 by PadhuSankar 48 Comments

Usually on Sundays, after lunch, I do not spend time in the kitchen. I mostly spend time doing other things which I love. Every Sunday evening, my husband prepares something light. Today, he prepared potato sandwich and it tasted awesome. He cooks well and I never fail to complement him, so that I will get rest (he he). He cooked and I clicked pictures. Kids will love this sandwich very much. Today we will see how to make potato sabji (aloo sabzi) sandwich following this easy recipe.

   Turmeric powder – a pinch
Chilli powder – 1/4 tsp or as required

   Toaster or tawa

Preparation

Peel the skin of potato and cut it into small pieces.

Chop onion, tomatoes, ginger and green chillies finely.

Method

Heat oil in a pan, add mustard seeds, when it splutters, add urad dal. When dal turns golden brown, add onions, green chilli and ginger. Saute until onions turn transparent.

Add tomatoes and saute for a few more minutes.

Then add chopped potatoes, chilli powder, turmeric powder, salt needed and cook covered, stirring in between until potato are tender.

Now our potato stuffing is ready.

How to make potato sandwich

Apply butter on one side of both the bread.

Place 2 tbsp of stuffing on one bread and cover it with another bread with buttered side facing down.

Grease the toaster with a little butter and toast the sandwich both sides until golden brown. If you do not have a toaster, you can toast the bread on tawa, place the stuffing on the bread and cover it with another toasted bread and enjoy.

Your potato sandwich is ready. Serve it as such or with tomato chutney or tomato ketchup.

Repeat the process for the rest of the breads.

Meet you all again with more interesting recipes, till then it is bye from Padhu of Padhuskitchen.

It looks awesome! I think kids of all ages would like this!

It's so nice you get a break. My husband avoids it at all cost. I think it's all over…he was splattered with hot oil when the fish he was cooking slipped. Oh well…maybe he'll clean up…haha! one can wish!
