Vella Aval-Sweet Aval Recipe-Sweet Poha Recipe with Jaggery

This is a very simple snack or dessert prepared with aval and jaggery. As I have posted almost all the important recipes for Krishna Jayanthi, this time I am sharing with you a simple dessert prepared with poha or aval (Lord Krishna’s favorite). You can give this to kids as after school snacks. Instead of letting them eat chips and chocolates, you can offer them healthier snacks like this, when they are back from school. It is filling and also nutritious. There are so many traditional recipes which are very healthy but are totally forgotten today. Today we will see how to make vella aval following this easy recipe.

Sweet Aval Recipe-Sweet Poha Recipe

   Ingredients needed

   Aval/Beaten rice -1 cup
   Jaggery- 3/4 cup shaved
   Grated coconut -1/3 cup
   Cardamom powder -1/4 tsp
   Cashew nuts-4-5 (optional)
   Ghee/clarified butter for frying cashewnuts -1 tsp

Preparation 


Rinse the aval (flattened rice, beaten rice) well 2-3 times and then drain the water completely. Let it sit for 10 minutes. You can use any aval, thin or thick or any variety. I have used Kerala Red rice aval (thick variety). If you use thick variety, after draining the water completely, sprinkle some water and keep it aside for 15-20 minutes. If you are using thin variety, just drain the water completely and keep it aside for 10 minutes. Whatever variety you use, make sure the aval is soft.

Method

Heat 1/4 cup of water and dissolve the jaggery in it. Filter it to remove impurities.

Boil the filtered jaggery water until you get a one string consistency* (see notes). Once you get one string consistency, boil for a further 3-4 minutes until the jaggery water becomes thick. Switch off the flame.

Add cardamom powder, aval and mix well. Then add grated coconut and mix well.

Heat a tsp of ghee and fry the cashew nuts until golden brown. Add it to the aval mixture.

Serve as a dessert or snack.

Variation (no cook recipe) – Prepare the aval as mentioned above in “Preparation”. Then mix powdered jaggery, grated coconut and cardamom powder with the aval. Make sure the jaggery you are using does not have any mud or impurities.

Notes -What is one string consistency? Take a little jaggery syrup in a spoon. Allow it to cool a little. Now touch the jaggery syprup with your forefinger and then touch the forefinger with your thumb. Pressing the syrup between your thumb and forefinger, pull apart gently, you should be able to see a single string/thread connecting both the fingers. This is one string consistency.

    My neighbor in the 1960's from Mangalore used to make this and she added fried Chana dhal and also sesame seeds plus melon seeds

    Made it a few days back and everything was OK. Followed the instructions as per the recipe. Though color and taste was good, the aval was hard to chew in the mouth. I used the thick (getti aval) variety and soaked it for 15 mins as per recipe.
    Could you help me to solve the problem.

      If you aval was hard, it needs more resting time. You can sprinkle more water and let it sit for another 5-10 minutes. I have written that whatever aval you use, make sure it is soft just like cooked rice. Check by eating it after the resting time. You will know if it needs more water or not.

    Hi Padhu, I tried this recipe a few days back, and the aval was very soft and delicious…I had tried a diff recipe frm another website…it was a disaster….but I tried your version and it came out very well…I have tried many other recipes in this blog…ila ada, payasam, paneer butter etc and all of them were successful in the first attempt…all your recipes are simple…and you have provided much needed extra tips for beginners like me…beginner or not for anyone trying a veg recipe for the first time I believe this is the best blog to refer…thank you for sharing all these recipes! and keep up the good work!

Since childhood, I like this sweet, which is cheap and best and also nutritius. Thanks lady. Who said, I am not a good cook? I am very good now.

    A point of information: About one string consistency of jaggery while on the stove low flame, 1) how long can one expect it to take to reach this stage and 2)how long to remain in one string stage before it goes too wrong?
