Chayote Curry-Chow Chow Curry

Here is a simple and easy curry recipe which goes well with both rice and roti.

Ingredients needed

Chow Chow/Chayote -500 grams
Onion – 2
Curry Powder -1 tbsp
Salt to taste

For the seasoning

Oil -1 tbsp
Mustard seeds -1 tsp
Urad dal -1 tsp
Channa dal/Bengal gram -1/2 tsp
Curry leaves – little

Preparation

Peel the skin of chayote and remove the seed.Cut it into cubes and keep it aside.

Cut onion lengthwise.

Method

Heat oil, add mustard seeds, when it splutters, add the other ingredients mentioned under seasoning. When dal turns golden brown, add onions and fry till it turns transparent.

Then add chopped chayote, curry powder, salt and cook covered till soft. (Stir and sprinkle water in between so that it doesn’t get burnt and also gets cooked evenly).

Serve it with hot steamed rice and rasam/sambar/ kuzhambu or roti.

    This looks simple and tasty. I am bookmarking it! I have only used chayote in Caribbean dishes, so cheap and easy to find around hear I want to try it different ways.
