Kalan Recipe- Kerala Kalan recipe-Onam Special dish

Kalan is a very traditional Keralite dish prepared using yogurt, coconut and vegetables. It is always a part of Onam Sadhya. Today let us learn how to prepare Kalan (Onam Sadhya Special) following this easy Kalan recipe.

Kalan Recipe

 Prep Time : 10 mins

 Cook Time : 15 mins 
 Serves: 2-3
 Recipe Category: Side dish
 Recipe Cuisine: Kerala

   Ingredients needed

   Plantain -2 (preferably Kerala nendrangai)
   Elephant foot yam (senai)- 250 grams
   Pepper powder – 1/2 tsp
   Chilli Powder -1 tsp
   Turmeric powder – a generous pinch
   Yogurt/Curd -1 1/4 cup
   Salt as required

   For Grinding

   Grated Coconut – 1/3 cup
   Cumins seeds/Jeerakam -1 tsp
   Green chilli -3

   For the seasoning

   Coconut oil -1 tbsp
   Mustard seeds -1 tsp
   Fenugreek seeds (Uluva) -1/2 tsp
   Red chilli -1
   Curry leaves – few

Preparation

Peel the skin and chop plantain and yam into medium size pieces.

Grind the ingredients given under grinding to a smooth paste and keep it aside.

Whisk curd and keep it ready.

Method

Pressure cook plantain and elephant foot yam (senai) with pepper powder, salt, chilli powder, turmeric powder for 1 whistle using less water. If there is water, cook until it evaporates.

Mash the vegetables slightly. Lower the heat and add curd/yogurt. Simmer and cook till it starts thickening.

Then add the ground paste, cook for a few seconds on low flame and remove from heat.

Heat a tbsp of coconut oil, add mustard seeds, when it splutters, add fenugreek seeds, red chilli, curry leaves and pour it over the kalan.

Serve it with hot rice.

Note – You can use any oil but coconut oil gives Traditional taste of Kerala.

    Dear Padhu,
    I am a 66 yr old single person who live on the outskirts of Hyderabad, where my friend Jacob runs a Malyalee shop that provides all the ingredients for Kerala home cooking, to remind me of my youth, and my mom’s food, in Ambalapuzha, which I yearn for and try to recreate. I do it daily just by referring to your food blog. I am most grateful to you, because I have dementia and can’t remember what ingredients to put in which recipe, though I am a good cook like all Malayalee men !!

    Generally in kaalan Cummin seeds are not used while grinding with coconut…only pepper and green chillies are used..to get authentic taste…
