Gujarati Kadhi is a sweet and sour dish prepared with yogurt and seasoned with spices. It is one of the simplest Gujarathi dish. It is very easy to prepare and taste delicious with piping hot khichdi. Today we will learn how to make Gujarati Kadhi following this easy recipe with step wise pictures.
Grind ginger and green chilli coarsely.
In a bowl, mix together curd and gram flour/besan without lumps.(Curd should not be very sour for this dish). Then add water and mix well. The mixture should neither be too thick nor too thin, so add water accordingly. I added around 1 cup of water.
Add ginger green chilli paste, turmeric powder and sugar.
Heat oil/ ghee in a pan, add mustard seeds, cumin seeds, when it splutters, add hing and curry leaves.
Then reduce the heat and add the curd + besan mixture, salt needed and cook stirring on medium heat.
When the mixture starts boiling, reduce the heat and cook stirring now and then for 10-12 minutes, so that the raw smell of the besan/gram flour goes.
Garnish with finely chopped coriander leaves and serve hot with khichdi, plain rice or pulao.
