Tindora Chutney-Kovakkai Chutney (Thogayal) Recipe

This is a very popular and spicy Andhra chutney recipe prepared with kovakkai (Tindora) which I learn’t from my friend. It tastes great with plain rice and can be prepared in a jiffy. It is also known as Dondakaya Pachadi. Today we will learn how to make kovakkai chutney/thogayal following this easy recipe.

 Serves: 3-4

   Ingredients needed

   Tindora/Kovakkai – 10-12
   Onion -1 (medium size)
   Garlic cloves – 5
   Red chilli -3
   Green chilli – 2-3
   Tamarind – a small piece or 1/4 tsp paste
   Grated coconut – 2 tbsp
   Coriander leaves – fistful (optional)
   Oil – 2 tbsp
   Salt needed

  For the seasoning

   Oil – 1 tsp
   Mustard seeds – 1 tsp

Preparation


Wash and cut tindora into thin strips or rounds.

Method


Heat oil and fry the red chillies first. Remove it and keep it aside.

Now in the same pan fry chopped onions followed by garlic, green chilli and tindora.


Cook till tindora becomes soft.(do not add water). Add needed salt. Once the tindora becomes tender, switch off the flame.

Add grated coconut, coriander leaves and saute in the heat of the pan itself. Allow it to cool.

Grind it a little coarse along with red chillies and tamarind. Check for salt.

Heat a tsp of oil, add mustard seeds, when it splutters, pour it over the chutney.This step is optional.

Serve it with hot rice and any vegetable curry. It can also be had as a side dish for idli and dosa.

    Instead of using raw mango or something else adds unique taste, flavour and vitamins to dish. You may consider and try out this. I may be too naive as you are expert.

      Yes, you can use 1 small tomato. But add tomatoes after sauteing onions.
