Egg Fried Rice is a very simple and popular Indo Chinese recipe. It can be prepared in a jiffy if you have cooked rice ready. It can be prepared with leftover rice also. When it comes to eggs, I prefer only omelet and egg scramble, so I love this egg fried rice very much. Today we will learn how to prepare Chinese Egg fried rice following this easy recipe with step wise pictures.

Egg Fried Rice-Easy Egg Fried Rice

   Ingredients needed

   For Fried rice

   Oil – 1 tbsp
   Cooked and cooled rice – 2 cups heaped
   Onion – 1
   Garlic – 5 cloves
   Beans -10-12
   Carrot – 1 medium
   Soya sauce – 2-3 tsp
   Pepper powder as required
   Salt needed

   For Egg scramble

   Oil – 2 tsp
   Eggs -2
   Salt to taste
   Pepper powder to taste

   For Garnishing

   Spring onion greens (finely chopped)

Preparation


Finely chop garlic, onions, carrot and beans. This step is very important.

Cook rice and cool it well. The grains should be separate. You can use regular rice or basmati rice or long grain rice. Leftover rice can also be used for this recipe.

Heat 2 tsp of oil in a pan, pour beaten egg into the pan, add a little salt and pepper powder. When egg has set a little, stir and scramble it. Keep it aside. Our egg scramble is ready.

Method


Heat oil, add garlic and saute for a few minutes.

Then add finely chopped onions and fry until translucent. Now add the finely chopped beans, carrot and stir on high flame.The whole process has to be done on high flame stirring continuously. Do not over cook the vegetables. The vegetables should retain their crunchiness.

When the vegetables are done, add cooked and cooled rice, needed salt, pepper powder, soya sauce and toss to combine until well coated.

Add the prepared egg scramble and toss well. Garnish with spring onion greens. Serve piping hot with tomato sauce or any Indo Chinese dish like gobi manchurian or vegetable manchurian.

How to make egg fried rice

This egg fried rice is very simple, needs very less ingredients and can be prepared very quickly. It is healthy, filling and delicious. Super quick, yet delicous!!

    I love fried rice and make it often.I always use day-old rice so it's dry. I add a little water to a beaten egg and pour it into a big, oiled, heated skillet. It makes a large diameter very thin omelet. I roll it like a cigar and cut it crosswise into strips. I put it in the fried rice mixture and then pour a raw beaten egg into the mix and stir it rapidly.This makes it moist and creamy. I'm getting hungry now.

      For fried rice, you have to use only soya sauce. If you do not like it, you can omit it or add less.
