Pudina rice with Paneer

This is a very simple and flavorful rice prepared with fresh mint leaves. It is very easy and quick to prepare  that you can put up for lunch or dinner in no-time.  It is a quick fix for lunch. It is great especially when you are tight for time. It is not only easy but also nutritious. It can be prepared with any rice or millets or quinoa. You can use leftover rice also for this. It is perfect for lunchbox both for kids and adults. If preferred, you can add sauteed paneer cubes (optional) to the mint rice. Mint rice can be served with any vegetable curry or a simple raita or chips. Potato fry goes very well with this mint rice. Today we will learn how to make easy, filling and flavorful mint rice following this simple recipe.

Pudina rice with Paneer-Mint Rice/Pulao

 Prep Time : 10 mins

 Cook Time : 20 mins

   Ingredients needed

   Basmati Rice – 1 cup
   Onion -2 (medium sized)
   Paneer cubes -10 pieces (fry it in oil/ghee)
   Salt to taste

   For the grinding

   Fresh Pudina/Mint leaves- 1 bunch
   Green chilli- 3 -4
   Ginger– 1 inch piece
   Garlic- 3 cloves

   For the seasoning

   Oil -1 tbsp
   Cloves -3
   Cinnamon -1 inch piece

Preparation


Wash and soak Basmati Rice in water for 20 minutes.

Then drain the water and cook rice adding 2 cups of boiling water in a rice cooker/pressure cooker.

Finely chop onions and keep it aside.

Grind pudina/mint leaves, green chillies, ginger, garlic to a fine paste.

Method


Heat oil and add the ingredients mentioned under “for the seasoning”.

Add onions and sauté till they turn pink.

Add the ground paste, salt required and fry till oil separates. It will take only a few minutes.

Add the cooked rice and paneer cubes and mix well.

Serve hot with any raita or just chips or appalam.

    Gind fresh pudina with green chilli, ginger and garlic and then saute.I have mentioned everything clearly. Kindly read it 1-2 times

      You can add soya chunks or tofu or just have plain pudina rice. I sometimes cut 1 or 2 potatoes into cubes, saute in oil with salt, turmeric powder and chilli powder and mix it with pudina rice. It tastes awesome.

      Thanks Shilpa for your nice comment. I do not have a youtube channel but have plans to post videos. You can add turmeric powder and chilli powder as soon as you add potatoes. Fry it well until roasted and then add to the mint rice.

    Madam ty fr d receipe..today i made it guess it came out very well.a point to b noted in grinding ingredients add tamarind 5-7pieces it gives rich flavour.as i today added tamarind it gaved a nice flavour.mam weneva yu post yua videos jus let me kw i ll b d first to follow n lyk d posts.ty padma g..
