This black eyed peas salad is easy to make and is rich in protein. Salads are a very common feature in our home. I usually prepare this for my daughter as an evening snack when she returns from school. It is filling, nutritious and of course delicious. Wash and soak brown black eyed peas in water overnight or for 6 hours. Pressure cook with just enough water to soak the black eyes peas, salt needed, for 3 whistles or until soft.
Cut tomato and capsicum into strips after removing its seed.
Boil potato, remove the skin and cut it into cubes.
Finely chop green chillies after removing its seeds.
In a mixing bowl, combine together cooked black eyed peas, potato, tomato, ginger, green chilli and capsicum.
Add lemon juice, pepper powder, roasted jeera powder and salt needed. Since we have already added salt while cooking black eyed peas, add less salt now.
Garnish it with finely chopped coriander leaves and serve as a snack or as a side dish.
You can add chat masala if preferred.
