Potato Spinach Recipe

March 7, 2010 by PadhuSankar 62 Comments

The health benefits of spinach are numerous and its ability to help prevent diseases is well known. Spinach is an excellent source of beta-carotene, a powerful disease-fighting antioxidant. It is a rich source of Vitamins C, A, minerals and iron. It can be called the Super food. Combined with the versatile potato, it is a fantastic side dish for rice or roti (Indian flat bread). This is a very simple and easy curry which can be done in a few minutes time. Enjoy the health benefits of spinach by preparing this easy and simple Spinach Potato Curry (dry sabzi).

Vinegar is not that healthy.I use only white vinegar for fried rice. We will be adding very less for fried rice. If you do not like it you can omit it.

Padhu should the potatoes be cut in half or can be full while pressure cooking? Also approximately how many whistles to pressure cook potatoes?

Cut it into half and pressure cook for 3 whistles. Some potatoes does not get cooked properly if kept full.
