Capsicum Rice-Capsicum Masala Rice-Bell Pepper rice

Here is a quick, colorful, flavorful and delicious rice recipe. It hardly takes 10 minutes to prepare this dish.Once rice is kept ready,this dish can be prepared in a jiffy and is also a perfect lunch box recipe.I have used all colored capsicums to make the rice look appealing, but you can prepare the same with green capsicums alone.

Capsicum Rice–Capsicum Masala Rice–Bell Pepper rice

 Capsicum riceTips – Grill capsicums, stuff it with capsicum rice and serve it just to make it look more appealing

If you do not find time, you can add ready made coriander powder, chilli powder and cumin powder but if you have time, I suggest that you add freshly ground spice powder as it makes the dish more flavorful and tasty.You can check my other delicious capsicum rice recipes like corn capsicum pulao, capsicum gravy for rice, potato capsicum pulao and more capsicum recipes.

Capsicum Rice Video 

Ingredients needed

Basmati Rice – 1 cup
Capsicums chopped – 1 1/4 cup ( all 3 colours together)
Garam Masala Powder – 1 tsp
Onion – 1 chopped

Ingredients for Masala Powder

Urad dal – 2 tsp (optional)
Coriander seeds – 2 1/2 tsp
Jeera /cumin seeds – 1 tsp
Red chillies- 4-5

For the seasoning

Oil -1 tbsp
Mustard seeds – 1 tsp

Preparation

Wash and soak basmati rice for 20 minutes, drain the water and cook the rice in such a way that each grains are separate. Keep it aside.

Chop capsicums into small strips.

Heat a tsp of oil, fry urad dal, coriander seeds, cumin seeds and red chilli. Powder it and keep it aside.

Bell pepper riceMethod (Just 3 steps)

1.Heat oil in a pan, add mustard seeds, when they splutter, add finely chopped onions and saute till it turns transparent .

2.Now add the chopped capsicums, prepared masala powder, garam masala powder and salt needed. Saute on high flames till the capsicums are slightly cooked. Do not overcook as the capsicums should be crispy and not soggy.

3.Mix cooked rice gently, garnish with coriander leaves and serve hot with raita or chips or any gravy.

    Fry till the dal turns golden brown .After it cools, powder it a bit coarsely and use it.Hope this helps.
