Stuffed Capsicum

The market was flooded with capsicums, so I decided to prepare stuffed capsicums. You can either bake or steam these stuffed capsicums instead of frying them in oil, as it is more healthy. I have tried both methods and it has turned out well.Today we will learn how to make stuffed Capsicum/Bell pepper curry following this easy recipe.

Stuffed Capsicum-Stuffed Bell Pepper


Stuffed Capsicums

 Prep Time : 10 mins

 Cook Time : 20 mins 
 Serves:4
 Recipe Category: Side Dish

   Ingredients needed

   Capsicum -4-5 medium size
   Potato – 4
   Boiled Peas – handful
   Onion – 1 big finely chopped
   Salt – as required

   Turmeric powder -1/4 tsp
   Red chilli powder- 3/4-1 tsp
   Coriander powder- 2 tsp

   For the seasoning

   Oil – 2 tbsp
   Cumin seeds/jeera – 1/2 tsp

Preparation


Pressure cook potatoes until soft, peel the skin and mash it slightly.Keep it aside.

Heat oil, add cumin seeds, when it sizzles, add onions and sauté until it changes colour.

Add peas, mashed potatoes, salt needed, red chilli powder, turmeric powder and coriander powder.

Cook on low flames for 5-6 minutes stirring in between.

Now the stuffing is ready.

Preparing the capsicums

Remove the stem and scoop out the seeds inside carefully and fill it with the potato stuffing. Grease the capsicums on the outside with oil.

Method


Preheat an oven at 180 degree C for 10 minutes and bake the capsicums for 10-15 minutes at 180 degree C or until done (be careful not to burn it).

Alternatively you can steam cook for 10- 15 minutes and enjoy with rice or rotis.

    Anu – Apply little oil all over the capsicum and steam it in a steamer or idli cooker just as you steam idlis . You can steam it like you steam dhoklas also.
