Tindora fry-Dondakaya fry-Kovakkai fry

I have already posted kovakkai curry recipe (tindora curry) with potatoes. Now this is a completely different recipe without potatoes, onions and is very delicious with rice and roti. It is slightly crunchy and that is the highlight of this fry. If you have not prepared kovakkai this way, then do try this and I am sure you will love it very much. This fry needs a generous amount of oil. I used sesame seed oil as it is good for health. Today we will learn how to make tindora fry following this easy recipe.

Tindora Fry-Ivy Gourd Fry

 Prep Time : 10 mins

 Cook Time : 20 mins 
 Serves: 4

   Ingredients needed

   Kovakkai (tindora) – 500 grams
   Chilli powder – 1 tsp or as required
   Turmeric powder -1/4 tsp
   Salt as required

   For the seasoning

   Oil – 2 1/2 – 3 tbsp
   Mustard seeds – 1 tsp

Preparation


Wash ivy gourd, cut both the ends and discard it .Then cut it into thin rounds as shown in the picture.

Method

1.Heat oil, add mustard seeds, when it splutters, add kovakkai (ivy gourd), turmeric powder and cook covered for a few minutes.

2.Then add chilli powder, salt needed and cook on low heat stirring from time to time to prevent it from getting burnt. Do not sprinkle water- it should get cooked in the oil itself.


3.Once the vegetable becomes tender, remove from heat and serve with rice.


Believe me, it tastes awesome with rice and roti. I had this with rice and ridge gourd dal yesterday, it was simply divine.

    I love Dondakkai Padhu, but as the veg is somewhat dry in California I have been
    cooking it with some tamarind water and comes out great. Tastes somewhat like the
    Eggplant cooked likewise(Rasavangi). Would like your comments.

    I always use pepper powder with powdered Roasted gram. It also tastes delicious but it will be full dry.
