Healthy Broccoli Soup Recipe-Simple Broccoli Soup-Low Fat Broccoli Soup

This is a very healthy and low fat soup recipe as it does not have cream or cornflour in it. I have added a boiled potato to give texture and thickness to the soup. This soup tastes great and can help you lose weight. Today let us learn how to make Broccoli Soup following this easy recipe.

Broccoli Soup Recipe

How to make Broccoli Soup

Prep time – under 10 mins
Cook time – under 15 mins
Serves -2

Ingredients needed 

Broccoli – 1 cup (chopped)
Potato – 1 small (boiled and cubed)
Onion – 1
Garlic – 4-5 cloves (minced)
Oil – 2 tsp
Salt and pepper powder to taste

For garnishing

Broccoli florets – 2 blanched and chopped finely (optional)

Preparation

Wash and chop broccoli. Use the florets alone. You can use the stem for making vegetable broth.

Chop onion and mince garlic.

Cook potato, peel the skin and cut it into cubes.

Method

Heat oil in a pan, add finely chopped onion and garlic, saute until onions turn translucent.

Add 1 cup chopped broccoli, cooked potato, salt needed and saute for another 2 minutes.

Add 1 cup of water or vegetable broth, simmer and cook until broccoli becomes tender.

Allow it to cool and blend it to a smooth puree. Add 1 1/2 -2 cups of water and reheat the soup.

Add pepper powder to taste. Garnish with finely chopped broccoli.
Serve hot with brown bread. It makes a filling meal. You can adjust the consistency of the soup as per your personal preferences.

    Dear Padhu,

    For weight loss all ingredients are good except potato because Potato is full of carbohydrates which provides energy.

    In weight loss program we avoid carbs in order to use fat as energy.

    please tell me why you mention potato if this is a weight loss soup.

      Yes, Arjun I agree with you but I have used a very small potato. Usually we add maida or cornflour to thicken soups which is very harmful for us, so in other to avoid that I have used a small potato. A small piece of potato is not going to affect in any way.

      It's not a good idea to avoid carbs totally for weight loss.Balanced meal is right option which include carbs fats and proteins in significant amount.

    I almost didn’t try the recipe because the list of ingredients provided no liquids so I was thinking it was flawed. I did try it after reading directions and used some homemade chicken broth I had in the freezer and used my immersion blender which worked out great. The result was a hearty soup we enjoyed
