Guacamole Egg Salad Sandwich Recipe-Boiled Egg Guacamole Sandwich

In our last post, we learn’t to make guacamole, today we will make guacamole egg salad sandwich. Egg and guacamole go very well together. It is not only easy to make but also healthy and filling. This guacamole egg salad can be had as such or can be used in roti rolls or wraps, on toast, frankie etc. Today we will learn how to make Boiled egg avocado sandwich following this easy recipe.

Guacamole Egg Salad Sandwich

Avocado Egg Sandwich-Boiled Egg Guacamole Sandwich

   Ingredients needed

   Organic 100% Rye bread – 2 slices or any bread
   Hard boiled Egg – 1
   Guacamole – as needed
   Pepper powder to taste
   Salt to taste
   Oil/Butter – 1 tsp for toasting bread slice

Preparation 


Prepare guacamole as given in the link – Guacamole Recipe. (You need the quantity of guacamole mentioned in the recipe for 2 slices of bread if you spread lavishly).

Hard boil egg*, remove the shell, cut the egg into small pieces and keep it ready.

Method


Mix the diced boiled egg with guacamole. Sprinkle salt and pepper powder if required.(This can be eaten as such as an egg salad or can be served on a toast or wrap or rotis or frankie).

Toast the bread slices with oil/butter on a tawa or toaster.

Spoon the guacamole egg mix on the toast and serve.

Serving suggestions (optional)– With roasted asparagus, tomatoes and mushroom seasoned with salt, pepper and oregano to make a filling breakfast.

Closed 
Guacamole Egg Salad Sandwich

You can also make closed sandwich instead of open faced sandwich.

For that, toast two slices of bread and spread guacamole on one bread slice. Place lettuce leaves, two slices of tomato, few slices of cucumber and 1 onion slice. Sprinkle little salt and pepper over the vegetables.

Spread a little guacamole on the other bread slice and close with the guacamole side facing down. Press to make them stick together as shown in the picture below. Cut into triangles and enjoy!!

Hard boiled egg – Place egg in a pot, cover it with cold water. Add a little salt to the water to prevent the egg from cracking well as making it easier to peel. Bring it to rolling boil. Let it boil for 2 minutes. Then remove from heat and let it sit covered for 10-12 minutes. After that, drain the water and pour cold water over it to stop the cooking process. Repeat 2-3 times, then peel off the shell. Your hard boiled egg is ready.

Note – Those who do not eat eggs can skip the egg and prepare guacamole sandwich.

    How long before can I prepare this sandwich?. If I prepare in the morning, will it be fresh until lunch? Especially the guacamole.

      I don't thinks so. Guacamole will get oxidized without refrigeration.
