Vazhaipoo Murungai Keerai Poriyal-Drumstick Leaves Banana Flower Stir Fry Recipe

This is a very simple and very delicious stir fry (yes, I mean it) made by combining banana flower and drumstick leaves. Both banana blossom and drumstick leaves are rich source of fiber and other vitamins and minerals. Banana flower is good for women who suffer from excessive bleeding (menorrhagia) during menstruation. Both banana flower and drumstick leaves helps to increase breast milk production. Drumstick leaves are rich in antioxidants which helps protect cells from damage. Though cleaning both drumstick leaves and banana flower is a pain, it is worth the effort. Both are inexpensive and available all round the year. Including it in our diet often is an inexpensive and healthy way to meet some of our nutritional needs. If you have not tried combining these two, then I strongly recommend it. Today we will learn how to make vazhaipoo murungai keerai poriyal following this easy recipe.

Vazhaipoo Murungai Keerai Poriyal

   Ingredients needed

   Onion – 1 cup finely chopped/2 medium sized onions
   Garlic – 4-5 cloves finely chopped
   Drumstick leaves – 1 cup firmly packed
   Plantain flower – 1 cup chopped
   Salt to taste
   Turmeric powder – 1/4 tsp
   Grated coconut – 1/4 cup

   For the seasoning

   Oil – 1 1/2 tbsp
   Mustard seeds – 1 tsp
   Urad dal – 1 tsp
   Red chillies – 2-3
   Hing – a pinch

Preparation


Clean banana flower and chop it finely. Keep it in diluted buttermilk until use, to prevent discoloration. Check out how to clean banana flower? if you are new to it. Drain the buttermilk and pressure cook banana flower with salt, turmeric powder and less water for 2 whistles.

Once the pressure subsides, open the cooker. O
nce it cools, squeeze out the water from the plantain flower and keep it aside.

Wash and remove the drumstick leaves from the stalk. Avoid using matured discolored leaves. Chop it roughly and keep it aside.

Method 


Heat oil in a pan, add mustard seeds, when it splutters, add urad dal, red chillies and hing. When dal turns golden brown, add finely chopped onion and garlic.

Saute until onion turns transparent.

Add drumstick leaves and cook covered. It will not take more than 5 minutes for the leaves to get cooked.

Once the leaves are cooked, add the cooked banana flower and salt needed (as we have cooked the banana flower with salt, add salt accordingly).

Mix well and cook covered for another 2 minutes.

Add grated coconut, mix well and switch off the heat.

Serve as an accompaniment with rice. Enjoy!!

Tips to clean Drumstick Leaves – Though drumstick leaves are very good for health, not many prepare it as cleaning drumstick leaves is a pain. I will suggest an easy way to clean drumstick leaves- all you have to do is to roll it tightly in a paper and keep it in the refrigerator overnight – next day you will find the leaves would have shed off from the stalk. As I have a drumstick tree in my house, I love to use it fresh from my garden. Always it is better to cook fresh leaves, but at times, when you do not find time, you can follow the above tip.
