Besanwali Bhindi-Besan Bhindi Masala-Stuffed Lady’sfinger Fry with Gram flour

Besanwali Bhindi is a dry sabji which is very popular in Rajasthan. It is very simple to make and tastes good. It goes well with chapati and rice. I personally like it with rice and dal. It is prepared with lady’sfinger, besan and various spice powder. Today we will learn how to make Besan wali bhindi or lady’sfinger with gram flour following this easy recipe with step wise pictures.

   Ingredients needed

   Lady’s finger – 250 grams/1/4 kg
   Gram flour/besan/kadalaimavu -1/4 cup

   Salt to taste

   Spice Powder    

   Roasted cumin powder – 1 tsp
   Coriander powder – 1 1/2 tbsp
   Fennel powder (saunf/sombu) – 3/4 tsp
   Turmeric powder – 1/2 tsp
   Amchur powder – 3/4 tsp
   Carom seeds/ajwain/omam – 1/2 tsp
   Red chilli powder – 1 tsp

   For the seasoning

   Oil – 3-4 tbsp
   Cumin seeds
   Hing – a pinch

Preparations


Choose tender lady’s fingers, the size of your ring finger. Wash it well and pat it dry with a towel. Spread it on a plate and let it air dry (this will prevent slimy or sticky bhindi fry) until we prepare the other things needed for the dish.

Dry roast gram flour/besan on medium heat stirring continuously until you get a nice aroma of roasted gram flour.

Once it cools, add all the spice powder mentioned under “spice powder” and salt needed. You may adjust the spices according to your liking.

Add little water and make a paste.

Cut the top and tail of the lady’s finger. Then slit the ladies fingers leaving an 1 inch at the base/bottom. Do not slit it into 2 halves.

Apply or stuff the prepared masala paste on the insides of the ladies fingers as shown below.

Method 


Heat oil in a pan, add cumin seeds, when it sizzles, add hing and the masala stuffed ladies fingers.

Mix well and cook covered on low heat. Stir or toss gently at regular intervals.

Once the ladies fingers are cooked, turn off the heat. (Once done the color will change).

    Thanks for the recipe. Kids did not like it though. They prefer the one served in restaurants where the bhindi is crispy. Can you tell me how to make it crisp.

      That is a different recipes where the bhindi is deep fried. It is called bhindi kurkuri.
