White Pumpkin Raita-Ash gourd Pachadi-Poosanikai Pachadi

You might have heard of pumpkin sambar, mor kuzhambu, pumpkin kootu, but here is a delicious and simple pumpkin raita /pachadi which goes well with flavoured rice, plain rice and is also a tasty side dish for paratha. Give it a try.


Pumpkin raita-Ash gourd pachadiPoosanikai Thayir Pachadi /Ashgourd Raita recipe/ Kaddu ka raita

Ingredients needed

Grated white pumpkin – 2 cups
Thick curd – 2 cups

To be grounded raw

Green chilli – 3
Grated coconut – 1/3 cup
Fresh coriander leaves – handful

For the seasoning

Mustard – 3/4 tsp
Hing/asafoetida – pinch
Curry leaves – few

Preparation

Peel, remove the seeds and grate pumpkin. Add salt and keep it aside for 10-15 minutes. Then squeeze out the excess water and keep it aside. Do not waste the water, use it to prepare buttermilk.


Grind chilli, coconut and coriander leaves to a fine paste.

Method

Beat curd lightly, then add grated pumpkin and the grounded paste. Mix well.

Heat a tsp of oil, add mustard seeds, when it splutters, add hing, curry leaves and pour it over the raita.

Pumpkin raita is ready to be served with rice or parathas.
