Cucumber Raita-Cucumber Raita Recipe-Kakdi Raita

I love all dishes prepared with curd/yoghurt. Cucumber raita is one my favorite dish. I do not need any accompaniment for it and can have it as such anytime of the day. I prepared Cucumber raita and potato chips for my Easy Vegetable Biryani using pressure cooker. It tasted awesome.This raita (Indian Salad with yogurt dressing) goes well with most rice dishes and I love it even with chapati. Try this simple, healthy recipe and enjoy!


Cucumber Raita-Vellarikkai Pachadi-Cucumber Yoghurt salad


Kakdi raita-Vellarikkai Pachadi Ingredients needed

Thick curd/ Plain yoghurt – 1 1/2 cup ( add more if you like)
Grated cucumber -2 cups
Roasted Cumin Powder – 1 tsp (dry roast jeera seeds and powder it)
Salt as required

For the seasoning

Oil – 1 tsp
Mustard – 1 tsp
Green chilli -1 finely chopped
Curry leaves – few

Cucumber RaitaMethod

Grate cucumber, add salt needed and keep it aside for 15 minutes. It will ooze out water. Squeeze out or strain the water. (You do not have to waste that water, use it to make buttermilk- cucumber buttermilk tastes great)


Mix curd with it.

Heat a tsp of oil , add mustard seeds, when mustard splutters, add finely chopped green chilli and curry leaves. Pour it over the cucumber+ curd mix.

Sprinkle roasted cumin powder on top and garnish with coriander leaves.

It is a fantastic side dish for Vegetable pulao ,Mint pulao ,Tomato rice, Peas pulao, Cauliflower pulao and most rice dishes and all biryanis.

You can enjoy it chilled as such without any accompaniment also.

Variations-

Grated carrots and finely chopped tomatoes can also be added to this.

      You can use the malabar cucumber not these regular ones.
