Rava Idli is a very popular South Indian breakfast dish which is very simple to prepare at home. It does not require any elaborate grinding like the traditional idli and can be prepared in a jiffy. Today let us learn how to prepare soft and spongy Rava Idlis by following this simple Rava Idli Recipe.

   Salt as required
   Coriander leaves – handful
   Cashew nuts – 6-7 (break it )

Rava idli recipe

Method

Heat oil in a kadai /pan, add mustard seeds, when mustard splutters, add hing and urad dal.

When dal changes colour, add cashew nuts, ginger, green chilli and curry leaves.

Then add rava and roast it nicely for a few minutes. Do not burn the rava.

Allow it to cool. After it cools, add curd, finely chopped coriander leaves, carrot, baking soda and needed salt. Add water little by little and mix it well without lumps. The consistency of the rava idli batter should be similar to idli batter. The batter should neither be thick nor thin, so adjust water accordingly.

Let the rava idli batter rest for 15-20 minutes.

Pour it on greased idli moulds and steam cook for 10-15 minutes just as you do for normal idlis.

Serve piping hot with tomato chutney or any chutney of your choice.

You have to add baking soda or eno. That is the reason why your idlis are not soft.

Padmavathi Srinevasan -The curd should be a little sour and baking soda is a must.Probably your batter was too thin. Anyway you will not get like normal idlis but it will be soft and tasty.

Hi Padhu, I had tried this recipe before but every time I prepare this I get a kind of weird taste, may be because of soda, how to avoid that???

Karanth – I have not had this problem before. The reasons for the weird taste of cooking soda or baking soda might be
    1. you have added too much soda.
    2. The product is old stock .
So buy a good brand next time and try it or you try decreasing the amount of soda bi carb when you prepare next time.

Hi Padhu. Thanks for the recipe. I have tried this multiple times but results are not consistent. Twice they came out extremely well but sometimes it's very hard. I think I add the same quantity of water each time. Do you have any suggestions as to what might be the mistake I'm making?

Do not go by the same measurements when it comes to water. The consistency of the rava idli batter should be similar to idli batter. So add water accordingly.

Tried rava idli and came out well. I reduced the quantity of curd and added little lemon extract. Don't know if it's right method. I had no other option since my curd stock was less.
