Beans Carrot Curry-Carrot Beans Stir fry recipe(Poriyal)
This is a very simple low fat, stir fry recipe which is very healthy, simple and also colorful .
Beans - 250 grams
Carrots - 2
Peas - 1/2 cup ( fresh/frozen)
Turmeric Powder - a pinch
Coconut (grated) - 2 tbsp
Salt to taste
For the seasoning
Mustard -1/2 tsp
Broken Urad dal - 1/2 tsp
Red dry chillies - 2 broken into pieces
Hing/Asafoetida - 1/4 tsp
Curry leaves - little (optional)
String the beans (french beans),wash and cut it into small pieces.
Wash, peel the skin and chop the carrots.
Heat a tsp of oil and add the ingredients for seasoning .
Then add the beans,chopped carrots, peas, turmeric powder and needed salt.
Add little water and cook covered till soft. Stir 2-3 times in between, so that everything gets evenly cooked.You can sprinkle water if needed in between while stirring.
Then add grated coconut, mix it well and remove from flame .
Serve this Simple Beans Carrot stir fry or Beans Carrot poriyal with rasam, sambar, kuzhambu or roti.
