Corn soup-Cream of corn soup

Soups are always comforting and with bread they make a light meal by itself. Let us learn to make cream of corn soup today

There are 3 steps in preparing this soup.

1. Prepare Vegetable stock.

2. Cook the corn.

3. Prepare white sauce.

Ingredients needed

Sweet corn – 1/2 cup or more if you like
Vegetable stock – 2 cups
Butter – 1 tbsp
Corn flour or All purpose flour (maida) – 2 1/2 tbsp
Milk – 1 cup
Salt and pepper powder to taste

Preparation

Boil corn in a little water and keep it aside.

Prepare vegetable stock. (Check out my earlier post on how to make vegetable stock)

Method

Melt butter, add flour little by little stirring continuously. Cook over low heat for 2-3 minutes. Do not brown the mixture.

Add milk slowly to the paste and whisk it continuously and quickly so that there are no lumps.Now our white sauce is ready.

Add vegetable stock and corn to the above and bring it to boil.

Add salt and pepper powder to taste.

Serve piping hot with bread or have it without any accompaniment.
