Vegetable Rice-Brown Rice with Vegetables and Onion Pachadi

Brown rice has antioxidants, higher fiber content and nutrients that boosts the immune system than white rice.It lowers cholesterol, reduces risk of heart disease, colon cancer and reduces severity of asthma. Because of the high fiber content in brown rice, it keeps you fuller and satisfied for a longer time. It is a boon for those who want to reduce weight. Brown Rice Pulao-Vegetable rice with brown rice
Our Lunch – Brown rice pulao – curd rice – onion raita 

We have already learn’t  how to cook brown rice? If you have not checked that post, then please do that. Today we will learn how to prepare a simple Vegetable rice using brown rice and an easy onion pachadi to go along with it.

Ingredients needed

Prep time – under 10 mins (soaking time not included)
Cook time – under 30 mins
Serves -1

Brown rice – 1/2 cup ( I used regular organic brown rice)
Onion – 2 medium size
Ginger –  1 inch piece finely chopped
Green chilli – 1- 2 slit
Mint leaves/pudina – fistful

Mixed Vegetables –
Carrot – 1
Beans – 5-6
Peas – fistful (optional)

For the seasoning

Oil – 1 1/2 tbsp
Cloves – 2
Cardamom – 1 (optional)
Cinnamon – 1 inch piece

Preparation

Wash and soak brown rice for a minimum of 30-40 minutes in 1 1/2 cup of hot water.

Cut onion into thin slices. Peel skin and cut carrot into thin strips. Cut  beans into 1 inch pieces.Keep everything ready.

Method

Heat oil, add the ingredients mentioned under seasoning. Saute for a few minutes, then add thinly sliced onions, green chilli and ginger.

Saute for a few minutes or until onion turns pink.

How to make vegetable rice

Then add the vegetables, mint leaves,1 tsp (flat) salt and saute for a few more seconds.

Now add the soaked brown rice along with the water.Mix well.

Transfer the contents to another vessel and pressure cook for 3 whistles.Once the pressure subsides, open and fluff it with a fork. Hot steaming Brown rice with vegetables is ready.

How to make Onion Pachadi (raita)  (South Indian style)
Serves -1

Ingredients needed 

Onions -2
Curd – 3/4 cup
Salt to taste

For the seasoning 

Oil – 2 tsp
Green chilli – 1 small finely chopped
Mustard seeds – 1/2 tsp
Curry leaves- few

Method

Thinly slice onions. Add needed salt and keep it aside for an hour.

It would have oozed out water. Squeeze out the water from the onions and discard the water.

Now add beaten curd to the onions.

Heat oil, add mustard seeds, when it splutters, add green chilli, curry leaves and pour it over the pachadi. Mix it well and serve with Brown rice pulao.

      I have used only ordinary regular brown rice. You can use brown basmati rice also.

    Your recipes are awesome. Should we cook the brown rice in the water we have soaked it in or use fresh water?

      Thank you so much Nirmala. Wash brown rice well. Soak in very less water. You can drain that water and add fresh water to cook the rice.

    Can u add the south indian language also for the items.For example cloves or Cinnamon.if you provide a thumbnail view for the items also it would be great.

      Of course, you can. Same way you cook rice but with vegetables. That's all.
