Paneer Jalfrezi-Paneer Vegetable Jalfrezi (Curry)-Paneer Recipes

Paneer Vegetable Jalfrezi is a colorful and nutritious curry prepared with mixed vegetables and paneer. It goes very well with rotis, parathas and kulchas. You can also use this curry as a stuffing for chapati rolls.Chapati rolls with paneer vegetable jalfrezi is perfect for lunch box also. Today let us learn how to make paneer jalfrezi following this easy recipe.

   Ingredients needed

   Paneer – 200 grams
   Onion – 3/4 cup or 2 medium sized onions
   Ginger garlic paste – 2 tsp
   Tomato puree – 1/3 cup
   Kasuri methi – 1 tbsp

   Tomato ketchup – 1 tbsp
   Red Chilli powder – 1 1/2 tsp
   Coriander powder – 2 tsp
   Turmeric powder – 1/4 tsp
   Garam masala – 1/2 tsp

   Vegetables

   Carrot -1 julienned
   Beans -5-6
   Tomato -1 deseed and cut it into strips
   Capsicum -1
    Baby corn -2-3 julienned

   For the seasoning

   Oil – 2 1/2 tbsp
   Cumin seeds/ jeera – 1 tsp

   For garnishing

   Lemon wedges

Preparation

Cut all the vegetables lengthwise into thin strips. Cut paneer also lengthwise. (see picture below)

Slightly par boil the beans if required as beans will take a long time to get cooked.

Method 

Heat oil in a pan, add cumin seeds, when it splutters, add onions and saute until onions turn transparent.

Add ginger garlic paste and saute for a few more minutes.

Add all the dry powder (chilli powder, coriander powder, turmeric powder, garam masala powder) tomato ketchup and tomato puree.

Cook the mixture until it starts leaving oil. (see pic below)

Now add carrots, par boiled beans and baby corn and saute for a few seconds.

Add 1/3 cup of water, simmer and close it with a lid. Let the vegetables get cooked.

Once the vegetables are 3/4 th done, add capsicum and tomatoes. Cook for a few minutes. Do not over cook the vegetables.

Now add paneer pieces and mix well gently so that the masala is well coated with the paneer. Cook on low flame for 2-3 minutes. Switch off. Crush kasuri methi (dry fenugreek leaves) between your palms and sprinkle all over the curry. Garnish with lemon wedges.

Serve paneer Vegetable Jalfrezi with roti, kulchas or parathas.
